Hi! I just made it and I can’t wait to try it tomorrow! I made the cheesecake batter and divided it into two bowls. Then I added my Ube extract and Ube Himalaya to one bowl. Then added the Ube filling with the other batter to make it a swirl when it bakes. Looks so pretty and can’t wait to try it!
@@cookingwithkurt it turned out very pretty! The swirl of purple and white is so pretty. The only thing is that the crust was stuck to the pan. so I might have pressed it down too hard and maybe I need to precook the crust. Do you have any suggestions on that? Also the Ube taste wasent really strong enough sadly. I put the exact amounts in the recipe but i never really tasted the Ube. It was a very good recipe for normal cheesecake tho. Maybe the extract I use was not good? I’m not sure.
@@britneyngo8776 For the crust, the “trick” is to pat it down just enough so the crumbs stick together, but not too firmly so the crust doesn’t become hard and stuck to the pan. For a stronger ube flavor, you can add more ube extract, but this might affect the color as well. I use McCormick brand ube extract. Hope this helps! 😊

Hi both, I’m very grateful for this video. I’m new to baking so this is the recipe I’m starting out with. So I made this cake yesterday and left it in the fridge to chill. However when I cut a slide, the middle was a bit undercooked, not sure if it’s my oven not generating enough heat, but I followed the instructions so not sure what I did wrong. Also the top of the cake ended up a bit brown instead of the luscious purple. Any advice would be appreciated

Ube powder can be used as a substitute for ube halaya if ube halaya is not available - by reconstituting the ube powder in hot water (per packet instructions) making a paste, and adding 1/4 a cup of that paste to the cheesecake batter just like with the ube halaya. Hello! If I wanted to split this recipe into two 4inch spring foam pans and still cook it with a water bath how long would I cook it for and leave it in the oven to rest for ?
Hello - I’ve never personally tried that so I’m not sure. The waterbath method may not be ideal for 4 inch spring form pans as the pans + batter may not be heavy enough to be weighed down and may float in the water. Mini cheesecakes are probably fine without a water bath. Hope this helps! 😊

Hi, I followed your recipe for this cheesecake. I have a question. Is using UBE Flavoring the same as using UBE Extract? I didn't a different taste from the cheesecake. The recipe was easy to follow.
Hi Chad - if ube extract is not available, you can either leave it out (will not affect the cheesecake's' texture). Or substitute using vanilla extract. The cake won't have as strong an ube flavor since most of the ube flavor comes from the ube extract. But it will still be delicious with a subtle ube flavor from the ube halaya. Unfortunately, in my experience, ube extract is the only thing that creates that strong ube flavor, without affecting the light and airy texture of the cheesecake. Adding too much ube halaya would make the cheesecake a lot heavier. Hope this helps! :)

Hi Angelica - I haven't personally tried making mini cheesecakes with this recipe, and it depends on the size of your mini molds. But I'd suggest trying to bake them at 350 F for about 20 minutes, until the center is just slightly jiggly (I'm guessing no water bath, as they would not be heavy enough). Hope this helps! :)

Hi April - yes, you can bake this without a water bath using the same baking time and temperature. The water bath is there to help avoid cracks on the top of the cake, and create a flat and smooth top surface. But the cake can be baked without it. Hope this helps! :)
Can you freeze the pie into slices? I want to make it but don't want to eat the whole pie in one go... though it looks delicious and I do love ube desserts.
I do have a question, do you know how to make lumpia wrappers? The paper thin ones. They are hard to find any more. I grew up with using them and like them better for lumpia.

Hi Ashleigh - unfortunately I haven’t tried using egg substitutes in cheesecakes. You can try not adding any eggs, which means you won’t have to bake the cheesecake filling. Just bake the crust part for 20 minutes at 350 F, let crust cool, then add the cheesecake filling and let the cheesecake firm up in the fridge. It just might not have the same firm consistency where slices can be picked up neatly. Hope this helps! 😊

Hello! If I wanted to split this recipe into two 4inch spring foam pans and still cook it with a water bath how long would I cook it for and leave it in the oven to rest for ?
Hello - I’ve never personally tried that so I’m not sure. The waterbath method may not be ideal for 4 inch spring form pans as the pans + batter may not be heavy enough to be weighed down and may float in the water. Mini cheesecakes are probably fine without a water bath. Hope this helps! 😊

will the cake still have an ube taste if i’m not able to get ube extract ? would it help to just use more halaya as a substitute for the extract.
Hi Chad - if ube extract is not available, you can either leave it out (will not affect the cheesecake's' texture). Or substitute using vanilla extract. The cake won't have as strong an ube flavor since most of the ube flavor comes from the ube extract. But it will still be delicious with a subtle ube flavor from the ube halaya.
Unfortunately, in my experience, ube extract is the only thing that creates that strong ube flavor, without affecting the light and airy texture of the cheesecake. Adding too much ube halaya would make the cheesecake a lot heavier.

Hi Angelica - I haven't personally tried making mini cheesecakes with this recipe, and it depends on the size of your mini molds. But I'd suggest trying to bake them at 350 F for about 20 minutes, until the center is just slightly jiggly (I'm guessing no water bath, as they would not be heavy enough). Hope this helps! :)

Hi April - yes, you can bake this without a water bath using the same baking time and temperature. The water bath is there to help avoid cracks on the top of the cake, and create a flat and smooth top surface. But the cake can be baked without it. Hope this helps! :)

Hi Ann - if ube halaya is not available, you can leave it out and just rely on the ube extract for the ube flavor in the cake - the majority of the ube flavor in this cake comes from the concentrated ube flavor in the ube extract.
Ube powder can be used as a substitute for ube halaya if ube halaya is not available - by reconstituting the ube powder in hot water (per packet instructions) making a paste, and adding 1/4 a cup of that paste to the cheesecake batter just like with the ube halaya. Hope this helps! :)

Hi Ashleigh - unfortunately I haven’t tried using egg substitutes in cheesecakes. You can try not adding any eggs, which means you won’t have to bake the cheesecake filling. Just bake the crust part for 20 minutes at 350 F, let crust cool, then add the cheesecake filling and let the cheesecake firm up in the fridge. It just might not have the same firm consistency where slices can be picked up neatly. Hope this helps! 😊
