Ohhhh, all of this fine chopping... My busy momma brain says: "Put the veggies in the blender / chopper!". And my gourmet cooker's mind says: "Nooooo, you don't need a mush, but a finely chopped veggies!". Ugh, have to try both ways! :))) And will try to add mushrooms.
Another way is to shred them first then roughly chop..the processor can shred a lot in seconds. As for the onion and spring onion, use the processor to slide them into slices then roughly chop. It wont be a mush this way..

As a busy momma, just toss into the chopper. A few pulses :) Haha no need to do it by hand! Busy momma got other things on her schedule!!!

Rolled omelettes are a lot easier if you use a rectangular pan.
