- LEVAIN COOKIES RECIPE
(Makes 3 of each flavour)
3 flavors: Chocolate Chip Walnut, Dark Chocolate Chip Walnut, Macadamia Matcha White Chocolate
Base batter:
- 180g room temp unsalted butter
- 180g brown sugar
- 90g eggs
- 3 tsp vanilla extract or beans from 1 vanilla bean
Chocolate Chip Walnut
- 110g plain or all-purpose flour, 2g baking powder, 1g salt, 50g Chocolate chips, 40g walnuts
Dark Chocolate Chip Walnut
- 90g plain or all-purpose flour, 20g cocoa powder, 2g baking powder, 1g salt, 50g Chocolate chips, 40g walnuts
Macadamia Matcha White Chocolate
- 93g plain or all-purpose flour, 7g Matcha powder, 2g baking powder, 1g salt, 50g White Chocolate chips, 40g macadamia nuts
Directions:
- Boil Walnuts for 1-2 mins and bake it at 180deg Celsius for 15 mins
- Beat butter and sugar until combined
- Add eggs one at a time or in 2 batches
- Add Vanilla extract and combine everything well
- Split batter in 3 batches, it should be about 146g per batch
- Sift the respective flours into each batch as shown in the video and add chocolate chips and nuts until well combine, do not overmix.
- Measure about 110-115g per cookie dough for each flavour and chill them in the fridge for 1 hour.
- Preheat the oven at 190deg cel for 10 mins, and then bake the cookies at 180deg cel for 18 mins.
- Let the cookies cool down on a cooling rack. The cookies should have a crunchy exterior and a cakey interior.
Storage and reheating:
- Cookies can be stored for up to 5 days in the fridge.
- To reheat, remove from fridge and reheat in air fryer or oven at 170deg or 2-3 mins.

I just made this today and boy, they were all so good! I refrigerated the individual cookie dough for 2 days. I used Hersheys Dark Chocolate cocoa powder. I used SENCHA Organic Matcha powder from Costco. I baked them in 350 ˚F for exactly 18 minutes. In the recipe, it states that you boil the walnuts, dry them then toast them. I have never boiled walnuts before prior to using them in baking but it does make a big difference. The walnut-y flavor is much more intense when you boil them. If I had to tweak the recipe, I would probably just use 5 gr of matcha powder instead of 7gr. I could hardly taste the macadamia nuts and white chocolate because it competes with the matcha powder though I love the green color. I will re-do this and give them to friends. Thank you, Wini 👏👏👏
That's awesome, l'm glad l finally realized why my cookies weren't coming out correctly. I wasn't freezing the dough long enough.

Why boilthe walnuts and then bake?
Can cookie dough be made in advance and stored in the freezer for 3 months until ready to bake?
Yes you can. Just scoop them out in individual rounds prior to freezing.
Why did you boil the nuts?
to get rid of the bitter taste

I made this recipe and when you boil the walnuts, the flavor of the nuts really comes through...more walnut-y :)
Can you please give the measurements in cups/tbsp instead of grams? :"( i dont have a weighing machine
You should get a scale instead. Using cups is unreliable.
Google will translate state ingredient from grams to cups and USA tb is 15ml metric country's 20ml ok cheers ellie
@@jameljames4835 Because it's easier to use cup , like who's gonna measures 90g of eggs , i would look for another recipe but it's good to add Ingredients in cups and grams so everyone have fun with baking 14:08
@@Ceo_Lubna 👍🏾 doesn't change the fact cups are unreliable which doesn't actually make it easier. For example, a cup of flour is 120 grams...when I use my 1 cup scoop I can get a scoop of up to 150+ grams. That's enough to through your recipe off, especially if that's happening with everything you add which makes it harder to narrow down what went wrong. Which is what used to happen to me. Once I made the switch, there are just certain issues I stopped having.

I would think it’s more cakey than chewy since a lot of other recipes I’ve seen use cake flour plus it doesn’t look really chewy 😊

No other way you gonna measure out 90g eggs lol you really need the weight to be exact for this to be baked right. Please buy a scale.
