All he’s doing is providing current information, and you do what you will with that information. One of the reasons our society’s health has deteriorated so much is due to cognitive dissonance and dogmatic beliefs that people refuse to let go of, in spite of new research. The no carb (carnivore) diet cured me (it's been 18 months). While on this diet, I've had muscle cramps, which I increased my mineral intake (electrolytes) and it went away. I also had low energy a certain times, but after I increased my fat/protein intake and my energy lasted all day (more than I ever experienced on carbs). There are times when our body is talking and we (humans) fail to really listen to what the body needs instead of wants. Maybe you are different, but I doubt you did what I did. Carbs aren't a need, its a want.

If the receptors increase and the organs don't hypertrophy and the hormones don't increase then who is to say that isn't the normal state? Do we have any evidence of organ hypertrophy and homone increase? What defines the normal size a organ should be or a hormone level should be? I'm not in disagreement but it's worth noting that when you measure a new system out of an old system you can judge it incorrectly because your "normals" are based in the old system. Low carb adapted atheletes can burn about 50% more from fat. Would that be sufficient for glucose production? In a low carb state the body becomes physiologically insulin resistant ie most of the body leaves the glucose alone for the brain and RBCs and burns mostly fat instead. Is that change sufficient for the brain/RBCs/anything else that doesn't have mitochondria? All the assumptions of conversions ie 5% of fats become glucose, protein 75g needed, 45% of the glucose replaced by proteins are pretty static. Can body adaptations happen that increase these numbers? Make things more efficient? More CO2 can also happen if you just breathe slower which I would posit is what people will naturally do. Slower breathing also leads to calmer thinking. (this is easily testable, next time you are upset take some long deep breathes and stay anger/upset) I love the specificity of your statements, these are the right questions to ask and are way more nuanced than most. I think almost all real food is healthy. It's when we start eating too much of one thing problems occur. Grain, for example! If half of what we eat is based on a single ingredient, we are in trouble. I know people who drink 3 liter of milk a day! And how many live on sandwiches? The body mostly tells us what we need. But we sometimes develop a craving for something, and then we have to use our brain to overrule that, and bring ourselves back to the base.

I mostly eat organic peaches/nectarines/strawberries, organic potatoes and grass-fed dairy for my carbs.

There are always SOME exceptions to the rule but the MAJORITY of people who have gone low carb/carnivore feel better eating more carbs.
