We're making Palak Dal Fry. This dish is not only delicious but also packed with essential nutrients, making it a perfect choice for a healthy meal. So, let's dive into the recipe.

    Ingredients:
    1 cup yellow lentils (toor dal), washed and soaked for 30 minutes
    3 cups fresh spinach (palak), washed and chopped
    1 large onion, finely chopped
    2 tomatoes, finely chopped
    3-4 garlic cloves, minced
    1-inch piece of ginger, grated
    2 green chilies, slit lengthwise (adjust according to spice preference)
    1 teaspoon cumin seeds
    1 teaspoon turmeric powder
    1 teaspoon red chili powder (adjust to taste)
    1 teaspoon coriander powder
    Salt to taste
    2 tablespoons cooking oil
    Fresh coriander leaves for garnish
    Lemon wedges for serving (optional)
    Instructions:
    Pressure Cook the Lentils:
    Drain the soaked lentils and transfer them to a pressure cooker.
    Add 2 cups of water, a pinch of turmeric powder, and salt to taste.
    Pressure cook for about 3-4 whistles or until the lentils are soft and mushy. Set aside.
    Prepare the Spinach:
    In a pot of boiling water, blanch the chopped spinach for 2-3 minutes.
    Drain and immediately transfer the blanched spinach to a bowl of ice water to retain its green color.
    Once cooled, drain again and blend the spinach into a smooth puree. Set aside.
    Make the Dal:
    Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
    Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute until fragrant.
    Add chopped onions and cook until they turn translucent.
    Now, add chopped tomatoes and cook until they soften and oil separates.
    Add turmeric powder, red chili powder, and coriander powder. Mix well and cook for another minute.
    Combine Dal and Spinach:
    Pour the cooked lentils into the pan with the onion-tomato mixture.
    Stir in the spinach puree and adjust the consistency by adding water if needed.
    Allow the dal to simmer for 5-7 minutes on low heat, allowing the flavors to meld together.
    Adjust salt and spice levels according to your taste.
    Serve:
    Once the dal reaches your desired consistency, turn off the heat.
    Garnish with freshly chopped coriander leaves.
    Serve hot with steamed rice or roti.
    Squeeze some fresh lemon juice on top before serving for an extra tangy kick (optional).
