Salmon Poke Recipe - Hawaiian Classics

  • Poke is a popular Hawaiian dish made with raw or slightly seared fish like tuna, or in this case, salmon. The fish is cubed and tossed together with a light soy seasoning with sesame and seaweed. It’s very refreshing and extremely delicious. Here’s a version that I make with wild sockeye salmon from Canada. Enjoy!
    Start with an 8 oz filet of wild sockeye salmon. If you can get it with the skin on, even better. Start by running a sharp knife along the bottom of the filet to remove the skin if you have it. Keep the skin for later. This is too good to just throw away.
    Dice the salmon into 1 cm cubes, and put them into a large mixing bowl.
    Once you’re done prepping the salmon, take that skin you set aside and put it on a sheet of foil or parchment paper, skin side down. Put it into a 350F oven until its nice and crispy.
    Now back to the salmon. Dress the salmon with a drizzle of soy sauce, sesame oil and Shaoxing cooking wine. Be sure to taste, making sure to adjust the flavours as you go. For colour, add some black and white sesame seeds as well as some finely chopped chives or green onions. Finally season with a touch of salt. Today, I’m using Hawaiian sea salt. It gets its red colour from iron oxide in the clay where it’s harvested. Mix everything together then set aside to let the flavours develop.
    When the salmon skin is crispy, let it cool then cut into thin strips. Now, let’s put it all together.
    Simply spoon some of the poke into small bowls or nice glasses. Top with a sprinkle of some furikake, then finish with some salmon skin strips. The roasted salmon skin is a nice compliment to the raw meat and gives a good texture contrast.
    Salmon poke is the perfect starter and can easily be made into an elegant party appetizer by putting into little fried wonton cups or mini temaki rolls. If you’re like me, enjoy it as a side to some great bbq or on top of a bowl of rice.

    When I was in Hawaii I enjoyed Poke. I love fresh raw fish in any form. This is a nice change up from the tradistional Poke. Great recipe and good job! And to aswer your question a full five stars for Tuna.

      It's important that you use sushi grade fish for poke. Any fresh fish will not be suitable for raw consumption. Mahalo!

    That's a great question. Most sushi grade fish must be flash frozen prior to being used to kill any parasites that may be in the meat, especially freshwater fish. This particular brand I'm using was frozen on the boat right after it was prepped, so all the fish I do buy for sushi I buy frozen.

      Brianna Perey I wouldn't... It takes about a week - if not longer - for your "fresh' fish to get from the ocean to your local grocery store. I'd try to find "sushi grade" frozen fish for your poke'.

      Exactly right. Make it and chill but eat as soon as you can after mixing. The next day you will already know it's a day old poke. Love your recipe! Me, I HAVE to have chopped ogo or some kind of fresh seaweed in it! Even slivered wakame if that's all you have. I love raw thinly sliced salmon skin in poke too! My favorite raw food? Raw clams on the half shell or raw hokkigai poke with lots of chili flakes. Then, ahi poke, as pristine as you can get it! Nice share, thanks!

    Ceviche's a little different. It uses an acid like lime juice to denature the protein. In poke, the fish is still raw. Ceviche is awesome.

    I do have a favorite, but it is one that is hardly known outside of Germany and Netherlands. In Germany it is called 'Matjes'. This is herring procured in salt and special enzymes make them tender and alter their color and texture.

    I have been eating raw fish for almost 50 years and don't recall it ever having made me sick. I actually like the taste of raw salmon much more than the taste of cooked. The flavor is much milder raw. Thanks for posting this Jay, I can't wait to try it! Sashimi and sushi are at the top of my favorite foods list.

      Sushi overall is better at room temperature since it's handmade. Poke like any raw product should be refrigerated, but can be left out just before serving.

    I was reading a book about a sushi chef that moved to Seattle in the 60's. He wrote about the fishermen at the time that would throw away ikura when they cleaned the salmon. There's a waste! lol.

    Yep, you need fresh sushi grade fish. Other than that, you have to keep things clean like your knife, your boards, etc.

    right @MrJingjong It is very important not to mix knifes, cutting boards, other prep utensils that are used for raw food and ones that prep food that go directly into your mouth. i highly recommend to have multiple sets of equipment if you can. x-post @DawnofHeros

    soy sauce is already salty some very ..do not add salt

      MADEMOISELLE LADY use low sodium, and mix w a bit extra sugar and rice vinegar to taste, lime adds a nice citrus too, then add a bit of water and continue to adjust sauce to your taste. You could even add some Korean red pepper flakes or smoky paprika to add some more body to the salty notes. Another idea is use dark sweet soy, also called soup soy, and it has a much milder flavor than sushi soy. Annie Chung is the brand I found at my supermarket of soup soy and it works really nicely, much less sodium.

    I retired from the meat department at Sam's Club. They sold skinless salmon fillets and even had us trim off the streak of fat that was on the edge of the belly flap. How wasteful of them. I took soy sauce and wasabi with me occasionally and ate the trimmings for lunch, the tastiest and most healthful part of the fish. When salmon are plentiful bears only eat the skin and roe. Hundreds of grizzlies can't be wrong, or at least shouldn't be argued with.
