Epiphany biscuits | Tuscan Befanini | Italian typical food

  • "Befanini" are traditional Tuscan biscuits, more precisely from the Viareggio area, which are prepared for the Epiphany. They are simple but delicious biscuits, with Christmas shapes, made with a soft, very fragrant shortcrust pastry and decorated with colored sprinkles.
    Popular tradition believed that these biscuits guaranteed the production of mothers' milk and therefore stronger children.
    Custom dictates that these biscuits are given as gifts to relatives and neighbors as a wish for abundance and, like all traditional recipes, this too can be different from family to family and from area to area. In some areas the name also changes and they are called "Befanotti".
    INGREDIENTS
    250 g of cake flour (00)
    100 g of sugar
    125 g of cold butter
    1 medium egg
    zest of an orange
    25 ml of rum or rum essence
    1 vanilla pod
    2 pinches of salt
    8 g of baking powder for desserts
    egg white and colored sprinkles (decoration)
    Blend all the ingredients in a blender. Chill the dough in the refrigerator for 30 minutes.
    Roll out the dough, cut out the shapes and brush them with beaten egg white. Add the colored sprinkles.
    Cook at 180°C for 7-8 minutes.
