- One of the hottest curries available, even hotter than the vindaloo, Phall is a British curry which originated in the Bangladeshi-owned curry-houses of Birmingham. It is often made with fiery habanero peppers or scotch bonnet peppers which are incredibly hot for most people

HEAT ##
This is a really hot curry but if you want to make it milder to still enjoy the flavours simply reduce the chilli powder to 1-2 teaspoons (rather than 2 tablespoons) and add 1 level teaspoon of Mr Naga pickle.
Ingredients ##
4-5 tablespoons of vegetable oil or ghee
1/2 teaspoon of fennel seeds
1 medium onion (around 150g, finely chopped)
1 tablespoon of garlic and ginger paste
2 tablespoon of tomato paste (mixed with 6 tablespoons of water)
1 teaspoon of mix powder or curry powder
1/2 teaspoon of salt
2 tablespoon of hot chilli powder
2 teaspoon of chilli flakes
1/2 teaspoon of fenugreek
1/4 teaspoon of garam masala
1 teaspoon of sugar
1 teaspoon of lemon juice
handful of fresh chopped coriander
250ml heated up curry base gravy
10 bits of meat, veg, paneer or tofu
2 teaspoons of Mr Naga (hot chilli paste)
4 green chillies (sliced)
Method ##
1. heat a pan on medium and add the vegetable oil or ghee. Add the fennel and allow to fry until it starts to sizzle
2. add the onion and continue to fry for a couple of minutes until the bitter smell disappears and it begins to caramelise
3. add the garlic and ginger paste, stir through and fry for around a minute
4. turn up the heat to max and add the tomato puree, mix powder, salt, hot chilli powder, chilli flakes and dry methi leaves, stir through thoroughly and allow to cook out for a couple of minutes. If you curries ever taste grainy it’s because you’re not cooking the spices enough at this stage
5. add in half of the heated base gravy, stir through and allow to reduce for a couple of minutes before adding the remaining base
6. after a further couple of minutes reduce the heat slightly as it tends to spit a lot at this stage, add the garam masala, sugar, squeeze of lemon and fresh chopped coriander and stir through well
7. add your choice of protein and coat to stop it from drying out and add in the Mr Naga pickle and fresh sliced chillies as well
8. allow to simmer until the oils separate, the meat is cooked through and the sauce is the consistency you require

I've been trying for decades to replicate a takeaway curry sauce / Gravy and you've shown me the way. Thank you
Fantastic to hear, enjoy 😋
I know this is old video but you deserve it 🥰 mouth is watering now. Where do i get the mix?
Thanks so much, that's truly appreciated. I make the mix myself, it's at thecurrykid.co.uk/recipe/spice-mix-powder/ hope it helps. Josh :)
Perfect timing, I was looking for a new curry to try for next week! This is the one 👌🏽
Thanks Amy, loved making this one :) Enjoy
You are very talented and your recipes are brilliant. Love a phall will be trying this out
Thanks so much 😊
Just found your channel dude, i cant seem to find anywhere local to try out the Phaal, ive been building up my chilli tolerance for some time, now i dont even feel heat from a Vindaloo, this is perfect, will follow your receipe, dropped you a sub too, keep up the great work!
Appreciated, thanks for the follow. Check out my insanity video as well, it’s probably hotter than the phall 😁
That Mr Naga chilli is 💯🔥😋
Brilliant recipe and lesson .
I will try this recipe 💯🔥😋
Hope you enjoy
I would have loved to see you eating this at the end haha, great vid buddy, just subbed hopefully you will make more hot curry videos. 👍
Thanks for the sub! After 4 mouthfuls my dad said I sounded like a cat bringing up a fur ball, lol :)
I made this along with the curry base over the weekend and it was amazing. Spicy! Very tasty (well at first anyways, could not taste much by the end but that is what you expect out of a Phaal or Vindaloo). Thank you for these videos and recipes and keep up the great work.
Thanks for trying. Glad you enjoyed it 😋
Just made this curry absolutely gorgeous thanks for sharing your recipe with us all
My pleasure, thanks for giving it a go. If you like that you may want to try the Insanity one : ruclips.net/video/2XjSLkUYCac/видео.html 😊

Great to hear Chris. hope you enjoy this one as much today :)
Awesommmme literally going to do this recipe
Hope you enjoy:)
Nice recipe! Easy to follow but some of the ingredients aren't available where I live. I'll try using reapers once I make this.
Many thanks, the reapers will be perfect. Enjoy :)
Very nice sir. I enjoy cooking too and I can cook dishes from 30 different cuisines sir. And I'm researching more daily
That's great. I love all types of food so maybe ill get round to that many one day :)
you are very talented that looked so freaking appetizing! best of luck on your channel
Thank you so much!!
Looks really nice but maybe a bit hot for me can you manage it yourself I've been having lately a chicken dansak from my local Indian I love it
Hi Richard, I have a Dhansak at ruclips.net/video/GzT4N7OLCUk/видео.html if it helps, it's one of the first dishes I made as it's my dads favourite.
I have this for tea tonight heated up, didn't dare have it on a school night. I have them fairly hot although mine has 2 teaspoons of chilli rather than 2 tablespoons and only 1 level spoon of Mr Naga rather than 2 heaped.
All the testers had theirs last night and I got great reviews which was fantastic. Enjoy :)
Great Job. What do you use for the base gravy. Thanks.
Many thanks, hope it helps ruclips.net/video/XLxfMxfwOUg/видео.html
@@TheCurryKid Thanks buddy, carry on the good work. :-)

My pleasure, hope you’re having fun 😁
Wow just stumbled across your channel, very impressive young man! Keep up the great work! Bright future ahead of you! Subbed :)

Thanks so much 👍
@the curry kid brilliant to see you knowing so much at a young age hopefully open your own buisness 1 day i will try this keep up the great work, well done
Many thanks Darren, really appreciate the support
My First Suggestion for you to cook is Chilli Paneer from Indo Chinese Cuisine and Chicken Ceylon from Sri Lankan Cuisine
Love the Ceylon, I've done that at ruclips.net/video/tbjcAN2h5NI/видео.html and the Chilli Garlic Paneer at ruclips.net/video/cHZANohQu1c/видео.html
The Curry Kid lol not that one Chilli paneer from Indo Chinese cuisine. If you prefer you can do Chicken Manchurian or Fish Manchurian also from Indo Chinese cuisine or Masala Mogo.
Thanks Varun, I'll take a look. Do you have a tried and trusted recipe for Chicken Manchurian or Chilli Paneer from this cuisine?
Curry looks awesome! Have to try soon. What is the beat called??
Many thanks, it's Coupe - The Grand Affair
does blending the onion give a better curry ? never tried it
Personally I think not. I like to have control over how much I caramelise the onions and you cant do that if they are just mush. It's 100% fine for things like Korma and Tikka Masala which taste strange with caramelised onions but for anything spicy I would stick to fine diced or sliced. I'll remove that bit from the recipe :)
@@TheCurryKid thank you sir
I want to try this looks amazing 💙
Please do, let me know what you think. If you like them hot this is the one for you 👉 ruclips.net/video/2XjSLkUYCac/видео.html
Thankyou so much that curry looks awesome right up my street, can't wait to try 😀💙💙💙🌶🌶🌶🌶
great job kid!
Thanks so much
Oh I miss Phaal SOOOO much..... What's a good substitute for Mr Naga paste?
Hi, I would add a Scotch bonnet. You’re not going to get all the extra flavours that are in Mr Naga but you’ll get the heat 🌶🌶🌶
looks great, i love naga phall. good to see a young man with the same passion :)
Thanks. really appreciated. Trouble is I make so many I can't settle on a favourite :)
@@TheCurryKid
cool, I think youl give Als kitchen and mistyricardo a run for thier money :)
keep it up, I'm subbed
It would be nice to be up with the legends. Plenty of time yet :)
Morning Josh. I hope you are all well? As you know, Madras is as far as we go with spice heat. However, my mate and college is a lover of this type of hot spiced curry and so I am going to cook it for him and see what he thinks. Thanks for the effort. Stuart
Morning Stewart, all good thanks (apart from being back at school) hope you are all well. Sounds like a great treat for him, my neighbours and testers all had this version last night and loved it, all said they couldn't go hotter though :) I've got this tonight although only 2 teaspoons of chilli rather than 2 tablespoons and 1 level teaspoon of Mr Naga rather than 2 heaped :)
Serious spiciness going on there with the Naga. This is way above the original 90's Phaal we were eating back then. Great recipe this but, from what I remember the main heat we got was from liquidised Scotch Bonnet chilli paste and bullet Chillis. The equally brutal Thai Jungle Curry was a challenge also, using liquidised Thai Red Chillies (Prik Kee Noo). Seems things have moved up but I reckon Scotch Bonnet is about as high as it gets - Scoville rating wise, without the pain or as you rightly mention the toilet.................;)
Yes, it’s a bit tingly 😂 this one is hotter if you like quite frankly insane curries ruclips.net/video/2XjSLkUYCac/видео.htmlsi=zNnFgcYBwrdFrL0j
@@TheCurryKid I have just been to the supermarket, bought some lamb and am now going to follow your Pathia recipe...........might spice it up a bit though as I grow my own chillies here in Whitby. Just dried out some Naga Morich so might add half..............keep up the videos.....................
Sounds like an awesome plan. I literally have a pathia every Friday, mum has a korma (not a proper curry) and dad has whatever I’m working on 😂
Oooooh that's a fire of a curry young man but my mate like someone else as said love's this curry and he can be my taste test for this one. 🥵🥵👍👌
Thanks Philip, let me know what he thinks :) I have it with just 2 teaspoons of chilli and 1 level tsp of naga if it helps :)
excellent my friend
many thanks, appreciated :)
Hi Josh
Think you could of added:-
“Before I begin, please take a second to put the toilet roll in the freezer”
No doubt, this one will induce a 💍 of 🔥
Have a great weekend!!
Great idea for next time :) Dad said he was ok today, not spoken to all the testers today (possibly all stuck to the toilet) and not having mine until tonight so I have the weekend to recover :)
Lol
Looks amazing, wish I had the balls to try it 😂
You can do it :)
Did you eat it after ?
my dad and I finished it off, had hiccups for about 20 minutes after though :)
Thanks for this Josh. How much extra hot chilli powder should I use for this and for the vindaloo please? Thank you in advance and keep up the great work
Hi, annoyingly it's down to the brand of powder you are using I'm afraid as I have a catering tub of normal powder which is about 4 times hotter than my store brought extra hot one :( Which brand are you using as I've asked Rajah this to see what they say and I'll advise. I would estimate 1/2 extra hot compared to normal hot but that's just a guess and where I would start with a dish
@@TheCurryKid It is the rajah brand that I have a good sized bag of the stuff. Extra Hot Chilli powder. Was just wondering if you knew how it compared to the hot chilli and just the standard chilli. My family say I make my curries too hot but they seem fine to me lol
lol, hopefully they will come back soon and ill let you know what they say :)
@@TheCurryKid thank you 🙏
Can you make it with ghost, scorpion and reaper peppers too?
Sure, I've already done that here, hope it helps (Carolina Reaper Challenge - Naga Ghost Phall with Carolina Reaper & Naga Ghost Chillies) ruclips.net/video/NAisbn65vC8/видео.html
Great video Josh. Do you have a recipe for the base gravy?
Hi, yes. It's a little old as it was my very first video back when I was 12 so I need to re-film thecurrykid.co.uk/recipe/curry-base/
Don't get too hooked up on the quantities of veg restaurants don't and I've just made more last night, kept to the spice quantities but chucked in 5 large onions, a potato, a whole carrot etc and it never tastes any different :)
@@TheCurryKid awesome. Cheers buddy and keep up the good work! 👍🏻
@@TheCurryKid made this tonight and it was superb. Cheers Josh!! 🍛 🌶 👍🏻
@@mattb3902 fantastic, great to hear. One of my testers said his lips went numb for an hour after eating it :)
I'd like to see you cook some Uyghur Cuisine Dishes like Big Plate Chicken and Dishes from Tibetan, Navajo, Mexican, Meccanese and others as well.
Great suggestion! Lots of learning to do :)
Hi there, another great video. I have been looking for a Good Phaal recipe and this looks like it. 1 question that you could please answer for me, I do not like the taste of naga chillies, is there something else that I could use that would result in the same heat without the taste?
Hi Paul, many thanks for the comment. I've used these before in dishes as it's all I've had at the time and it's added a great heat. Hopefully they may help
Franks Red Hot Original Cayenne Pepper Sauce
Tabasco Habanero
Tabasco Green Jalepeno
Tabasco Original
You can buy pkts of cubed frozen chopped green finger chillies, along with garlic and ginger in Morrisons.
They are all spot on, and the chilli would be perfect for you.
@@richcurtis813 many thanks, I've used the garlic and ginger before but never knew they did the chillies. I use the green ones in most dishes to be honest, just the right heat :)
@@TheCurryKid The Asian supermarkets also do the same but with fresh methi👍
Wow that looks proper really good like restaurant quality
Thanks so much 😁
Looks very tasty can you deliver me some please
Many thanks :)
took on two phaal's in my time... one a few years back , one last night ,,, heavy work , one few years back....had tears down my face :) , not took keen on the spicy food , but like the challenge , my dog loves some phaal , eats it like nothing lol
lol, they can sometimes be all heat no flavour. Got to admit I halve the chilly in this :) Glad your dog enjoys them anyway
@@TheCurryKid oh they thunder man fair play :)
I like that pan.
Thanks Gordon. These are a great size for me at 12" as they get so much of the flame on them all the time. I got 3 for £20 but they go up and down amzn.to/3s3Ky7U
Forgot loads of white pepper.
it'll be in the next one :)
Phaal is suppose to have Bhut Jolokia
I get what you are saying but you're not going to get that from most takeaway or British Indian restaurants. More chilli powder and a few spoons of Naga most likely. I'm planning a better one of these anyway, I was only 14 when I made this one so I've progressed a little since then :)
Any other suggestions for the best phaal recipe always appreciated.
i love this however my toilet does not
great to hear, many years since I made this one, may need to revisit to spice it up a little :)
why is a phaal or phal a joke rather than something to be enjoyed?
:)
Looks absolutely delicious and hot! 😋🌶🔥 Cheers from America
Thank you 😋
💜💜💜👍👍👍👍👍...nice👍👍👍💜💜💜
Many many thanks
What of u dont have bathroom?!
Always eat Phaal round a friends house :)
Phew toilet rolls are in the fridge for this bad boy
lol, mine went in last week to deep freeze. The lads that test mine all had today off so they waited until last night to eat theirs and report back :)
Can you do a Rogan josh video ?
Hi, I do have some old ones on my site and at TheCurryKid.co.uk and I’ve also just last week added a new recipe at thecurrykid.co.uk/recipe/one-pot-lamb-rogan-josh-base-free-from-scratch/ that you may want to try. Will be filming that in the next few weeks 😋
