Looks like Fajitas in the crockpot. I usually fix this in a cast iron skillet, but this way would be good for midweek quick dinner. Just spoon into a flour tortilla and enjoy! Thanks for the method!
This is so easy & delicious ❤😋 and very easy to customize. I found no sodium fajitas seasoning & used the mini peppers which were on sale! Krogers had there cilantro lime rice pouches on sale- this is a really good and tasty combo!!! Topped it with a little no fat sour cream & a little shredded cheddar cheese- so very easy and the cooking time is spot on correct @ 4 hrs on high. Thank you so much for sharing Justine!❤
Maybe sprinkle the dry fajita mix directly onto the chicken breast for a more concentrated flavor and proper seasoning of chicken itself. Then layer peppers & onions.
@@AndtherewasJoy13 I making this as I type. I scored my chicken break and rubbed some of the seasoning. I pour the rest of packet over the peppers and onion. After three hours I should be able to break up the chicken and may add a second package. But don't want overdue it. Easier to add than subtract when it comes to seasoning.
Also can turn the chicken into mush if you're mixer is too fast/you shred it too long. That happened to me once, and I never used it again. Forks are better.
I have a friend from Sorority whi has always added a block of cream cheese to this crockpot recipe...saving the cheese and sour cream for serving time! Old faithful recipe. 😋
Even though the hand mixer works to shred the chicken, it's a safety risk with the danger of hot liquid splattering. Take care. Or lift the chicken out and shred in a bowl with forks before returning to the pot.

Looks great, but may I suggest using minute rice: 1 cup water with 1 chicken bouillon, 1 cup rice and a splash of basalmic vinegar, delicious chicken flavored rice.
Oh, I'm going to have to make this one, looks delicious!!! Also thinking of cutting holes in one of those flexible cutting boards to make a splash guard so i can shred chicken like that, too - with my RA I get so tired doing it by hand. Thanks!!

It's just me at home, so I have a smaller slow cooker. This looks good with some adjustments. I like how you put the chicken in there without cutting it up first, shredding it after it cooks. And you used a mixer/beater to shred the chicken! Nice trick! I've got some beef chopped up fine for carne asada in the freezer. I think I'll use that here. I can be a lazy cook, so I'll cheat a bit with the peppers and onions. I do 99% of my shopping at Kroger, and they sell bags of frozen 3 pepper and onion blend that's just like your fresh produce. I've had a lot of success using the frozen stuff in place of fresh. And since I'm using beef, I might add in some corn. I think you just altered my menu for one day this week. Thank you!

Summer meals, too.
You don't have to use your stove or oven with a slow cooker, so your house doesn't heat up and strain your AC.

I tried the mixer one time, and the chicken turned into mush. It was nasty. Using forks are much better, give you more control, plus easier clean up.

Exactly! I would do the same thing season meat and then everything else. Veggies would need a seasoning too!
