Once again, you did not disappoint with your assessment of Ah Thai chicken rice. I watched the chicken rice series by the Analytical Cook and learned 2 key things to make them at home. 1) Chicken stock (at least 4 hours) is what drives the flavor of the rice, and 2) the internal temperature to achieve to produce 'silky' and moist chicken (165F.) Too bad my knife skill is terrible and butcher the meat when I debone, but that is a different story. 😂
hey alderic, idk if this has been asked before (sorry for asking if it has), but whats your work/education background if any? you know so much about particular cooking processes and culture, but you also clearly have multimedia training so i'm just curious. if that's okay.
my background is totally not food/media related. I learnt almost everything from RUclips and Google and just had a ton of practice cooking at home and publishing content online.
actually the tian tian gizzard is also like what you described I thought it was the best gizzard i had. But same issue with their rice also too wet. Any which yishun chicken rice are you referring to if it is not 925? The chong pang one is pretty meh
@Alderic. Oh i also like qi le but the bishan branch. Their soup of the day always seems to be peanut soup (or maybe because i only go on friday). At least it is better rated on google map. The yishun standard seems to have dropped. You should had tired the halal da jie mala besides the qi le coffee shop.

I struggle a lot with the butchering process too. You really need a sharp cleaver in order to keep the skin nicely in tact.
