    SOYA CHAAP BIRYANI
    Preparation time 10-15 minutes
    Cooking time 35-40 minutes
    Serve 2-4
    Ingredients
    For Soya Chaap Marination
    600 gms Soya Chaap, cut in cubes, सोया चाप
    ⅓ cup Fried Onion, तला हुआ प्याज
    1 tsp Kashmiri red chili powder, कश्मीरी लाल मिर्च पाउडर
    Salt to taste, नमक स्वादअनुसार
    ¼ tsp Turmeric powder, हल्दी पाउडर
    ¼ tsp Coriander powder, धनिया पाउडर
    1 ½ tsp Ginger Garlic Paste, अदरक लहसुन का पेस्ट
    ½ cup Curd, beaten, दही
    1 ½ tsp Ghee, घी
    2 Green chillies (less spicy & slice) हरी मिर्च
    ½ tsp Shahi jeera, शाही जीरा
    few Mint leaves, roughly torn, पुदीना पत्ता
    few Coriander leaves, roughly torn, धनिया पत्ता
    For Rice Cooking
    Water as required, पानी
    Salt to Taste, नमक स्वादअनुसार
    3 cups Sella basmati rice, (soaked for 20 minutes) सेला बासमती चावल
    For Soya Chaap Biryani
    1 ½ tbsp Oil, तेल
    2 Bay leaf, तेजपत्ता
    ½ inch Cinnamon stick, दालचीनी
    Marinated Soya Chaap, मैरिनेटेड सोया चाप
    Curd Mixture, तयार किया हुआ दही का मिश्रण
    ¼ cup Water, पानी
    For Curd Mixture
    2 heaped tbsp Curd, beaten, दही
    1 tbsp Shahi Biryani Masala, शाही बिरयानी मसाला
    For Layering
    Cooked Soya Chaap, पका हुआ सोया चाप
    1st batch of Cooked Rice, पके हुए चावल
    Cooked Soya Chaap, पका हुआ सोया चाप
    Fried Onion, तला हुआ प्याज
    few Mint leaves, roughly torn, पुदीना पत्ता
    few Coriander leaves, roughly torn, धनिया पत्ता
    ½ tsp Shahi Biryani Masala, शाही बिरयानी मसाला
    2nd batch of Cooked rice, पके हुए चावल
    1 tbsp Saffron water, केसर का पानी
    few fried onion, तला हुआ प्याज
    few Mint leaves, पुदीना पत्ता
    few Coriander leaves, धनिया पत्ता
    1 Green chili, slice, हरी मिर्च
    For Garnish
    Coriander sprig, धनिया पत्ता
    Green chili (less spicy & slit into half) हरी मिर्च
    Process
    For Soya Chaap Marination
    In a bowl, add soya chaap, fried onion, kashmiri red chili powder, salt to taste, turmeric powder, coriander powder, ginger garlic paste, curd, ghee, green chillies, shahi jeera, mint leaves and roughly torn coriander leaves.
    Marinate everything well and rest for 5-10 minutes.
    For Rice Cooking
    In a handi, add water, salt to taste and give it a quick boil.
    Add sella basmati rice and cook it on high flame for 2-3 minutes.
    Cover it with a lid and cook on a low flame for 8-10 minutes.
    Once the rice is 60-70% cooked, strain the rice with the help of a strainer. Keep it aside for further use.
    For Soya Chaap Biryani
    In a handi, add oil, once it’s hot, add bay leaf, cloves, cinnamon stick, star anise, black peppercorns and let it splutter.
    Add onions and saute until golden in color on moderate heat.
    Once the onions are cooked, add ginger garlic paste and cook it for 1-2 minute, add tomatoes and saute well.
    Add red chili powder, turmeric powder, Everest shahi biryani masala, salt to taste and saute the masala well.
    Once the masalas are cooked, add marinated soya chaap, little water and saute it well on moderate heat.
    Layer the cooked rice with the help of a flatten spoon or perforated spoon, add mint leaves, coriander leaves, kewra water, and fried onion.
    Add saffron milk and seal the edges with dough, cover it with the lid and allow to cook on the dum for 10-15 minutes on low flame.
    Open the lid and let it rest for a few minutes before serving, transfer the biryani onto a serving dish.
    Garnish it with coriander sprig, mint leaves, lemon wedge and fried onions.
    Serve hot with raita.

    Beautiful video. I love how every video I watch of Ranveer I feel like he’s talking only to me. Romance - the relationship between Ranveer and his ingredients. Specific to this, I feel like the cooking utensil is as important as the ingredient. I also feel that the flame used - big or small along with the setting of the flame is important.

      The whole process of making authentic raw soya chaap takes nearly 24 hours. If you have that much patience and time, you can go for it. Beware this soya chaap thing contains good amount of maida, else it wont have meaty texture only from soyabean. To make a kilo of chaap, you need around 2kgs of maida. Use 1.1 litre of water and hydrate the maida roughly into a dough, rest for 30 min and knead for 10-15 minutes. Rest the dough for 3 hours at room temperature and then keep it in the fridge for atleast 4 hours. Then take a large vessel half filled with water and start kneading that dough under water. Remove as much starch as possible till all the gluten is extracted. Keep the gluten ball on collander or strainer so that extra water is drained. Then keep working on the gluten ball by stretching and folding for 10 minutes and rest for 30 min. When gluten becomes uniformly elastic, introduce soy flour and nutrela powder (as much finely powdered as possible). Knead again till the powders are fully absorbed into the gluten ball. If required use some water. Add little bit of maida to give the dough right consistency and smoothness. Little bit of oil may be used to make the dough non sticky. Wrap in plastic bag and keep it in the fridge for 2-3 hours. Then cut the dough into 50-70gm balls and rest it for 30 min on a large tray. Elongate the balls and wrap on the ice cream sticks to give shape to the chaap. Simmer the chaaps till they float on the surface. Immerse in the cold water till they sink. Keep it like that for 2 hours and then drain and store in ziplock bag. Keep it in the deep freezer for atleast 24-48 hours before using them for any recipe. The composition of soya or other ingredients may be varied to suit your preference.

    My dearest chef.... Soya Chaap is a uncommon ingredient in Bengali cuisine. It is not easily available in market. Please teach us how to make " Soya Chaap" at home. If you take my request I will definitely try this recipe. I am your die hard fan.... I have tried so many of your dishes.

      I can tell you the recipe but i doubt if anyone has that much patience to make soya chaaps. Whomsoever i gave the recipe has said that they are better off buying from local market. But the fact is store bought chaap whether branded or local are not good for health. Nothing can beat home made chaaps regarding hygeine, nutrution and taste. I have made different compositions and came up with 22-30% protein content. Whereas market bought chaaps have somewhere between 14-17% protein content due to more starch ratio. Higher protein chaaps are crunchy whereas low protein chaaps are much more soft. We have to keep the protein somewhere in the middle, say 22-25%.

Till now I have made Mutton Biryani, Litti Chokha ,Daal Makhni ,Butter Chicken,Paneer Tikka Masala and many more delicious recipes. Sir we don't get readymade Soya Chaap here.Please help me with the same how to prepare them.Mine favourite is Biryani and I'm hardcore Indian loving Parathas, Biryani and Khichdi the most👍Lots of Love and Respect from Mumbai 💕

    Ranveer ji ka recipe aur presentation sabse mast hota hai. Bahut saare bade bade chefs youtube par apna channel chalate hain lekin Ranveer jitna apnapan kisi me nhi. Ye dialoge sabse achha lagta hai "Phir kahoge ki Ranveer ne bataya nhi". Aapke tarah intricate details koi nhi deta. Koi nhi batata ki failures ke kya kya reasons hote hain. Mere trainees ko bhi mai aapke style me office ka kaam sikhata hu. Wo bhi kehte hain ki itna detail me koi nhi sikhata.
