    Passatelli are a typical first course of the Italian culinary tradition, characterized by the particular shape of cylinders about 5-6 cm long, with a nutmeg and lemon flavor.
    The passatelli par excellence are served in meat broth but are also excellent as a dry first course, seasoned with various ingredients in fact the passatelli perfectly absorb the seasonings.
    Ingrediants
    300 g bread crumbs
    300 g Parmigiano Reggiano DOP (grated)
    40 g flour
    8 eggs (medium)
    q.s. nutmeg
    Lemon peel
    10 g salt (Himalayan rose)
    q.s. black pepper
