Ingredients:

- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons ghee or oil
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Saffron strands soaked in 2 tablespoons warm milk (optional)
- Fried onions for garnish (optional)
Instructions:
1. *Marinate the chicken:*
- In a large bowl, mix together yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, garam masala powder, and salt.
- Add chicken pieces to the marinade, coat well, cover, and refrigerate for at least 1 hour (preferably longer for better flavor).

- In a large pot, bring water to a boil.
- Add salt, whole spices (cardamom, cloves, cinnamon), and drained rice.

- Add sliced onions and sauté until golden brown.

- Cook the chicken until it is tender and the gravy is thickened.
- Adjust seasoning if necessary.
5. *Assemble the biryani:*
- In a heavy-bottomed pot, layer half of the cooked rice.
- Sprinkle chopped coriander leaves and mint leaves.
- Spread the cooked chicken mixture evenly over the rice.
- Layer the remaining rice over the chicken.
- Drizzle saffron milk over the rice for a yellow color and aroma (optional).
- Cover with a tight-fitting lid and cook on low heat for 10-15 minutes, allowing the flavors to meld together.
6. *Serve:*
- Once done, gently fluff the biryani with a fork.
- Garnish with fried onions, chopped coriander leaves, and mint leaves.
- Serve hot with raita (yogurt dip) or salad on the side.
