    Once a wine goes sour, it very difficult to reverse the taste. Your suggestion are not 100% it may only reduce some amount of sourness. No need to throw away sour wine. Can be used for cooking as substitute for vinegar. Also gives good flavors if meat is cooked in tjis sour wine.

    Hi,
    My wine got sour with good gravity, then I added sugar, but sugar never converted to Alcohol as gravity showing higher should I add more yeast or what ?

      Table sugar is not good for wine because it is not good food for yeast. That’s why wine maker never use table sugar... but I m using Belgian Cyrus sugar in my upcoming wine
      That was healthy and good for health

    Hi Ma'am,
    Thanks for your knowledge sharing session.
    My query which remained unanswered.
    I have fermented mango Wine. I have racked wine for the first time after 7 days to another container. I had put airlock in the primary fermentor and it was bubbling as well so it was fine. Now in secondary fermentation too I have put airlock.
    Also used mango, grapes(200gms only) were full ripe and sweet.
    It tastes sour and a little bitter. So I added 100 grams diluted sugar in water. But it still tatsed sour. When shall I add sodium bicarbonate, now or after 2-3 weeks?
    I have ordered sodium metabisulfite to remove any oxidation.
    Let me know your opinion. Please do reply

      1st put sodium metabisulphate
      Afterward wait for two days then do degassing
      Once you complete degassing the sourness will be removed
      You can see my recent posted one short video on degassing
      Go to my shorts playlist you find their
      According to that you do degassing
      I m sure the sour taste will be remove

      Ek saal tak koi problem nhi hoti agar aap ne wine ko sealed condition me rakha hai. Khol ke rakh diya toh same day kharaab ho jayega.

      Maynay Abhi tak peppermint wine banaya nahi hai so uska taste kaysa hoga mujhay pata nahi hai
      Par agar abhi tak fermenting chal raha hai to iska matlab fermenting process complete nahi huya hai
      Usay fermentation chalnay day another 7 days tak wait kijiya…

      Their are so many cause..,.
      1. Is ur container washed properly
      2. Is ur water was 24 hrs store water
      3. Is ur airlock fixed properly
      4. Is ur container lid fixed properly
      5. Is ur fruit washed properly
      6. Is it’s oxidation not happened
