Once a wine goes sour, it very difficult to reverse the taste. Your suggestion are not 100% it may only reduce some amount of sourness. No need to throw away sour wine. Can be used for cooking as substitute for vinegar. Also gives good flavors if meat is cooked in tjis sour wine.

Table sugar is not good for wine because it is not good food for yeast. That’s why wine maker never use table sugar... but I m using Belgian Cyrus sugar in my upcoming wine That was healthy and good for health
Hi Ma'am, Thanks for your knowledge sharing session. My query which remained unanswered. I have fermented mango Wine. I have racked wine for the first time after 7 days to another container. I had put airlock in the primary fermentor and it was bubbling as well so it was fine. Now in secondary fermentation too I have put airlock. Also used mango, grapes(200gms only) were full ripe and sweet. It tastes sour and a little bitter. So I added 100 grams diluted sugar in water. But it still tatsed sour. When shall I add sodium bicarbonate, now or after 2-3 weeks? I have ordered sodium metabisulfite to remove any oxidation. Let me know your opinion. Please do reply
