However, I did used to drink milk when I was a child and I can say it is not much of a difference. I personally am vegan for moral reasons and I don't mind the taste of vegan products whatsoever.

I do this with chickpeas and I don’t go this extra, so if you’re on a budget you can do this with minimal ingredients and it’s always going to be fire. I mash up chickpeas and use mayo, curry powder, and a splash of apple cider vinegar, with chopped up cucumber/celery/green pepper or whatever I have on hand, cilantro if I have it, and salt and pepper to taste. Hits the spot every time, and is like maybe $0.75 per serving if you count the bread. Sometimes I add tofu. And you can flavor it in endless ways, so it’s never dull. It’s one of my daily drivers, I always have a batch in rotation, and one can of chickpeas makes about 4 hefty sandwiches worth. Play around with it!
I made all three varieties of this and I have to say it’s really delicious. My favorite was curry chicken salad, though I modified it a bit, leaving out some spices as I didn’t have them on hand. I also added halved grapes and cubed apples. It came out fantastic! Thanks for this great recipe.
You should put the curry one in a pita 🥙. I think the gochugong salad would be good as a lettuce wrap. The cool lettuce against the spice, or even serve it over cold noodles.
I made the curry recipe today and actually used red grapes instead of golden raisins (I don’t like raisins) I also would’ve tried dried cranberries/cherries, I just didn’t have any. If you’re ever feeling like mixing it up, I highly recommend grapes. It doesn’t make the salad runny even when they’re sliced up!!
While I'm not vegan myself, my mom has gerd, so she can't eat meat. It effectively makes us a mostly vegetarian household. Your recipes have been a life saver for us, so thank you
For those who are more WFPB and don't buy vegan mayo, I recommend using homemade guacamole instead (or even a spicy peanut butter dressing depending on the sandwich you are making)
Life goals! Will be adding that gochujang to my PB toast rotation! Usually do avo/sauerkraut/kimchi! We use that paste several times a week, love the @koreanvegan's tofu too- thanks so much for more great recipes and ideas!
I'm a huge "chicken" salad fan! I'm going to do mine in classic sub/hoagie rolls. Gotta get some of that jack fruit. I like a conventional deli style with onion, chive, pickles, celery, etc.

An advantage of chickpeas is that you also can use the aquafaba for making mayo to use in the chickpea salad!
