I've made this 5 times already. It was my first time EVER making a cheesecake and it's always a hit! I've had people ask me to make one for them if they bought the ingredients. It's very simple and as long as you're organized and everything is room temp, you'll end up with a delicious, beautiful NY style cheesecake. Don't be intimidated. Sarah, Cheesecake is so amazing! It's my favorite...will for sure try your recipe. WOW 5 packs of cream cheese! Forget serving 20...I'll just eat half of it now and the other half later. Ok, with so many muffin tin recipes, you need to make muffin tin cheesecakes next. Lol when you almost forgot the lemon...lemon makes all the difference between a good cheesecake and a great one.

I am doing this cheese cake right now. Got back from work and doing the cake helped me relaxe a bit and to enjoy the night air while moving around and mixing everything together. Hope everything work well - it's the first time I am doing something with a water bath. And probably my 4th cake that I am baking on my own.... :D

Hi Sarah, this looks like a great indulgent cheesecake! Next you make cheesecake on EDF, could you please show you taking it out of the oven? I often struggle with knowing when it's slightly "jiggly" in the middle and not under/overcooked! Many thanks :)

And this is always a hit !I have a lot of my Swedish friends watching you,and sure there are many more living in the land of grams, decliners, and Fahrenheit that would appreciate if you mentioned the conversations. Also is it possible to make it without putting in a water bath? most European ovens are tiny by American standards, and this works at my country house where I have a custom made oven but my oven in Stockholm is too tiny to accommodate a large pan of water needed to fit with the spring form pan. This channel is amazing. But as a cheesecake fanatic I would suggest tapping the springform pan with the cheesecake mixture (pre-oven) on the counter. This causes the air bubbles from possible over mixing to come up and decreases the chances of a fugly cheesecake surface. Your taste buds can tingle with your eye buds! :)
Your cheesecake looks delicious. I'm making one right now. I add ricotta cheese to mine & less sugar, as I pour after its baked and cooled some strawberries or cherry pie filling that has more than enough added sugar.

Wow I'm learning so much. I'd like to know if I can substitute sour cream with heavy cream (and perhaps add more lemon juice for the tang) because where I live sour cream is not easily available.
I used Greek yoghurt as a substitute and that worked perfectly :) I don't know about heavy cream though as the consistency and taste are very different

I made this and the texture was a little grainy. I followed the recipe to the letter. Where did I go wrong? I used full fat cream cheese and source cream. Is it possible to over mix?
It is actually possible to overwork a cheesecake -- but not in the same sense as a cake batter as there is obviously no gluten in the cheesecake custard. When you mix, you are incorporating air into the custard, and too much air will make you lose that dense creamy quality that is so delicious in a cheesecake. I am not sure if air is the culprit to your grainy texture, but that might be an explanation.
Would it be lower calorie to use fat free cream cheese and fat free sour cream?

Its a NY cheesecake - its meant to be massive. You should just make it and have people over to eat it.Good food should be shared anyway.
I cut mine into four and freeze three, They defrost nicely and it works 0-)

Hi, yes, I've used heavy whipping cream, but only when I'm not going to be putting the cheesecake in the oven. Although there are a few recipes on here that use heavy cream and still bake it in a low oven. Just never use that sweetened condensed milk & bake a cheesecake. I've made that mistake, and it turned out terrible. Good luck!

I don't know what "style" my cheesecake is -- I do basically the same thing as here but use shortbread crust, a blend of vanilla and almond extract and heavy cream instead of graham, lemon and sour cream. It comes out really dense and creamy with a flavor similar to wedding or birthday cake. I guess you could call it "flyover cheesecake" -- lol.

liz1060 A true NY cheese cake require more work... Start with a shortbread base, replace half of flour with corn starch that make it extra light.. press evenly on a 10 or 12 in battered springform pan. The rest is easy. 2 pky250gm Philadelphia cream cheese ,5 yolks,. half cup of sugar, 2tbp flour, Half cup of milk/cream or evaporated milk... your choice ! just half cup !! No needed of sour cream if you don't like it, zest of lemon. Whip till smooth @nd lightly thicken remove to a bigger mixing bowl. In another CLEAN bowl, add 5 egg white, tsp. creamof tartare OR tbsp lemon juice,quarter cup of sugar. Whip still peak, mix half of in cheese batter. Then FOLD the rest in gently. Pour in lined butter/flour springform pan . Places in preheat 325 F for about an hour. When golden brown place a foil on top to avoid burning. Characteristics of NY cheese cake is rise and settle back about quarter inch with ring edge around. golden brown all around top and bottom. To minimise crack on top, spray cooled boiled water into oven or place tray of hot water underneath. To me, it taste the BEST when still warm !!! Like oven freh apple pie. Good Luck! You would love the lightness not as sweet then any other style if you do it right !
P.S. Try out Japanese Cheesecake they're easy to make... light and tasty. Lot of receipt ! Check out You tube .

Without a shortbread base, No settle in the middle with outer ring around that should be golden brown all around, top and bottom. NO h2o bath either that's Japanese way lately for theirs !
