We LOVE chocolate. Where does it come from, and why are we so obsessed with this food? Today we learn about The SCIENCE of Chocolate.
Our investigation takes us to Idyllwild, California and the "Bean to Bar" chocolatiers at El Buen Cacao.
We'll meet the expert chocolatiers, and learn about every step of the chocolate making process - harvesting the cacao, fermenting, drying, and roasting the beans, removing the shell to extract the cacao nibs, grinding the nibs to make cocoa liquor, tempering the chocolate, and finally pouring it into a bar.
We'll also discuss the remarkable chemical properties of cocoa butter. Did you know it has SIX solid forms? How do you know if your chocolate is good chocolate? What is that white bloom you sometimes see on chocolate? And is chocolate (and the active ingredient theobromine) really good for you?
