Did this in October 2024. You get to choose a knife to keep that you will learn to sharpen on. Recommend doing this before you buy any knives as you will learn so much about quality knives and upkeep. Great Kyoto experience Book in advance as it is becoming very popular
Skill will come with practice and experience. What took me a while to realize is the timing of pressure points for sharpening, when to press and when not to press. Final strop will make for super sharp knife.
You need to create a burr along the whole edge first, flip it both ways a couple of times and once that is established on a low grit, you can move on to higher grits. At the very end of the sharpening process, you need to remove the remaining small burr and then give it a subsequent polishing step, just a couple of passes on either stone or abrasive strop. Then finish with a leather strop.

Learning knife sharpening takes muscle memory and muscle memory is developed by practice and with that it's just going to take time.
