They are supposed to grate the cheese first on the cheese wheel and then put alcohol + light it on fire and wait for it to melt. This pasta didn't have any cheese on it, it was just cream.

Indian mozzarella cheese have no taste, I had mozzarella loaded chicken sticks in Italy, it was soo good and the cheese tasted like sour cream.

They didn't say it's parmigiana reggiano. Parmesan could be from Wisconsin too and then there is the garbage saw dust from Kraft foods. A real Parmesan wheel from Italy could cost upto $2000.

He didn't get much of Parmesan cheese but lost his bechamel sauce on the wheel. Parmesan is hard cheese that's why can't be melted like mozzarella. Although looks very delicious...
Also nobody ads sunflower or any other oil.... Only olive oil or butter is used
@@manin4568 That just may be LIGHT Olive Oil, preferred for sautéing. Extra Virgin O.O. is used for finishing dishes. But, this restaurant just may use something other than O.O; as to not overpower the flavor of the cheese and sauce. We haven’t eaten there. We just don’t know. Looks yummy, though.
No mozzarella on a dish like this. Besides, the way this dish is made you wouldn’t use mozzarella…no such thing as a mozzarella ‘wheel’ that could be used like this. THE FLAVOR is key. Parmesan cheese has a much stronger taste than mozzarella (which I love; especially Burrata!).
@@shejean light oliv oil looks light green in colour and extra virgin looks dark brown, this looked like pale yellowish, which i think was either vegan fat or any sunflower... Looks good though i have eaten in milan, Venice, parma, Rome, i cook Italian... Not an expert but Parmesan cheese should not be melted like in the video, Parmesan should be garnished in the end in order to incorporate the complete punch of its taste...

I totally agree. Stuff like these are too greasy and heavy and little tomatoes help lighten it up.

I have been to once 8 commune first at aerocity, then at civil lanes and then at punjabi pagh. Delicious food, much better ambience even than a five star because it's decorated as a pub.

The opposite of what I'd want from a meal. Begins with the clattering of that trolley then the guy spilling pasta on the counter and then putting it in the little boiler. Then more scratching and banging of the pan and huge ladle, coupled with that ridiculous blowtorch. Why not just a normal plate of pasta??

That wheel is going to last them a century or more the way they are making this and whoever is paying for this is gonna be spending 50 times more than if they made this at home minus the cheese cos, well, it is minus the cheese. You melt the cheese or grate it and then add that to the pasta. The way they are doing it, all you're seeing and getting is the cream that they already put in it. Not even a little bit of cheese melted out of that wheel from that 🤣

Yes but this cheese wheel cheese is probably soaked with flavor from all the pasta and whatever else was cooked on top of it, so it probably is the most intense cheese youll ever taste.

That cheese wheel cooking is just gimmick, its better to shred parmesan cheese over the pasta or cook with grated parmesan. The cheese surface which he torched didnt even went fully into the pasta, Its still remained on the wheel and Parmesan is solid unlike mozzarella or processed cheese, wont melt that easily by just the heat of cooked pasta. It hardly melted even by direct flame from the torch.
I agree it's a gimmick they didn't do it properly, the proper way is to put alcohol in the cheese wheel and then light up that alcohol to melt the parmesan inside to create the cheese sauce, they are adding white sauce seperately, it's a farce , but anyway they tried, if not alcohol they could have tried it with half a cup of boiling chicken broth or something to melt the cheese inside the wheel, but they way they did it that cheese wheel is gonna last 100 years lollllllllll(metaphorically) ..........

Yeah in actual it's meant to be done by heating alcohol that flames up and that flaming alcohol is meant to be poured in to the cheese wheel and spread it around the surface to distribute the hot alcohol to melt the cheese as just using torch on the cheese will only just burn it but not melt it properly. Instead of alcohol then they should have used boiling broth and poured that into the cheese wheel for those who don't want alcohol.

Not much difference from roadside vendors. Not sure if pasta noodles were freshly made or was it preboiled. Hardly any cheese got into. Blow torch burns quickly, so must be good taste of ash as well.

@@Shreecools Yes you are right. However I am also not wrong. Sphagetti came from Chinese noodles only. For this reason, I tend to generalise vermicelli and Sphagetti as noodles. Italians no doubt took it a few steps ahead, marrying with cheese and tomato based sauces.

The whole thing is a SCAM. I will explain. First of the, the whole in the cheese wheel needs to be shallow so that the heat stays inside. Secondly, the cheese needs to be shaved abit before heating so that chunks of cheese are ready to be melted. Also you cannot use a flame burner to melt cheese, you need to take alcohol, set it on fire and pour on scrapped cheese to melt and not cook it. After all this, the pasta goes in and comes out coated in cheese. In this case they just torched the surface of cheese, places pasta, rolled it around and took it out.. This small wheel will last 4- 5 year with this Scam.

Could have been done better by mixing boiled pasta in cheese first, later this mix into pan of pasta preparations and lastly adding green topping

My Italian Fratello (brother) took me to Perugia, Italy - the home on Pasta alla Ruota which literally translates to Cheese wheel Pasta and the taste was just wonders to behold. The tomatoes and truffles that the Italian harvest from the volcanic soil are simply soul touching. Just elevates the overall taste of the pasta dish through the roof.

The taste in all probability would not be good too. He is melting Parmesan, a hard cheese (which by the way is not authentic Parmigiano Reggiano) which would affect it's flavour. Also, Parmesan has sharp taste and would overpower the taste of Bechamel sauce quite easily. Besides what kind of chef boils Pasta twice. And who would put fucking broccoli to a pasta dish. The whole point of broccoli is that it's not tasty but it's healthy and this dish is miles away from healthy.

Even if mould grows it is still fine after we scrape the bad layer. Very resilient.
Atleast use a non stick pan with wooden spatula. It will good elegant and will make less noise. Secondly putting the pasta dropped on the table in the boiler not hygienic.

It’s looks good , but don’t call it italian, this is not Italian, just because has cheese or pasta, it’s a different way… not traditional Italian. The past was already cooked, preheat on hot water after, the pasta needs to be al dente, and use the water pasta to make the cream, not using cream or bechamel sauce… anyways…

What if moulds grow on the cheese block after using it as a mixing pan continuosly and moisture or water gets absorbed by the cheese making it perfect for fungus to grow and wasting such an expensive cheese like this is not good and the food particles left over on the cheese will spoil in a day or two and can grow moulds or bacteria too.
Why not simply scrap a layer of the cheese then melt it and add it to the pasta lol.
It is the traditional method broo used all over the world.

You are supposed to cut the cheese and half first and then you scrape the access part out and then you make a bowl type structure in between and then you put white wine or alcohol in it and you torch it it melts and then you are supposed to put pasta and make it you are just using it from the very top this is not gonna feel very cheesy.

Original Parmesan cheese come from Italy and they have the stamping and all marking and have GI mark. You can trace its where bought.
