  • Barracuda are one of the most fun fish to catch off the southern California coast, but they often get a bad reputation as table fare. Barracuda are actually really good to eat, as long as they are iced right away and eaten fresh. 'Cuda make great fried fish tacos, but my favorite way to use the meat is by smoking it.
    Recipe:
    Remove the skin and bones from a fillet, and then carefully trim off any and all of the red bloodline.
    Marinate over night in a mix of teriyaki and soy sauce- I use three parts teriyaki to one part low-sodium soy sauce.
    Smoke at 165° F for six hours. Remove, and allow to cool completely in the refrigerator before bagging.
    Eat within four days.
