Actually, the reason I show all the steps to make the cinnamon rolls, is to make it easier for people (especially for the novice). That way you know exactly how to make them. While other people's videos may be shorter, the reason for that is that they are not showing all the steps.

Donna C that is mostly because Stephanie is Canadian but living in US for long time...I used to watch her on TV in the late nineties or so. This vid is a little older; but still brilliant; I like her new ones even more...in new kitchen! She is great at explaining more advanced baking techniques & recipes to beginners.

I've made these cinnamon rolls before, but I made a few changes that worked out really great. I made some homemade butter (no salt) and buttermilk that I added to the dough. I decreased the butter in the dough to just 2 tablespoons and added two tablespoons of canola oil, for the soft texture. I think the buttermilk made it rich enough. Had to substitute half the all-purpose flour with bread flour, because I ran out.
For the filling, I just used 3 tablespoons of half melted homemade butter I spread over the dough. I also decreased the amount of brown sugar to a scant 1/2 cup.
I don't like a lot of glaze on my cinnamon rolls, but I mixed cream cheese, juice from half an orange and maple syrup together for the glaze.
I let my bread machine do all the mixing and kneading and ended up with a big ball of dough that yielded 12 cinnamon rolls. I baked 8 of them in my 12-inch Lodge cast iron skillet. They barely fit, but I don't mind having 4 in the fridge to bake tomorrow.
What really surprised me was the texture. Was almost like cotton candy, very light and seemed to melt in my mouth. But the crust had a light crispiness because of the cast iron. You can bet I'll try to make homemade butter every time I make cinnamon rolls. I just finished eating one and it was so light I'm about to indulge in another. I don't think I've ever eaten two cinnamon rolls at once.
Thanks for inspiring me so much Stephanie!

Fabulous dough!!!! I make them through the shaping and immediately put them in the freezer. When I want to bake two rolls - I take them out and leave them on the counter and they "puff" and then I bake per the recipe. These are the BEST!!! Thank you Stephanie!

Stephanie, I just have to say what an inspirational teacher you are. I have followed you religiously for years because you inspire confidence. I have a co-worker who is diabetic that I made these cinnamon rolls for by substituting coconut sugar for brown and another alternative for the white and powdered sugars also subbed 1/2 the AP for fresh ground wheat. He loved them, and I have to say I was quite proud of how they turned out too. Never would have thought I could do it if I hadn't learned so much from you. Thank you from me and a happy old man with diabetes.

I make these every week. Everyone loves them. I add strawberries spread and fresh strawberries sliced in the filling as well as a cream cheese frosting with lemon or lime juice. They are delicious. It does take some time to prep cinnamon rolls but I like to make the dough and refrigerate it until the day I use it. I then let it stand in a warm area in the kitchen for 2 hours or so. Sometimes I even refrigerate the rolls and when I need them I let them stand at room temperature for at least 2 hours before baking. Once you get the hang of making them it's so much easier and well worth a try.

I just love this recipe. It was the first challenging pastry I made and they turned out great. You got me into baking which eventually evolved into a passion for cooking and I'm grateful for that. I'm planning on going into culinary school and its thanks to the inspiring videos you make and a combination of others like you. The only thing I can say I hate about cooking is when I'm cutting something and accidentally sliced my finger, but I guess that comes with the territory of cooking right?

I made plain rolls a while ago and she cried when she tasted them, she says I cook just like her mom

Well, just sitting down to (actually ate the first one already) LOL. Excellent recipe. Will definitely be making again. This week for a bake sale (will scale down the size of the buns though). I did add a bit of lemon flavouring and grated orange rind. As well, I used orange juice in the glaze to carry the flavour through. I am going to let them sit to see how much orange flavour makes its way through the buns before I decide to add more rind to the next batch..... if they last that long. :)

Omg ty! Finally someone else says that it depends on a lot of things when it comes to how much flour..I mean there's a starting amount, a safe zone and the little extra on the side you leave for "in case" lol I find that a lot of foods you just make it by smells and feels alone but for me I measure just about EVERYTHING when it comes to doughs...there's a lot of variables and so many easy ways to ruin it lol

If you want to make sure that your yeast is fresh, you can activate it first in a warm liquid. You could do that with this recipe, if you like. Warm the milk to lukewarm and then add the active dry yeast. Let it sit until bubbly and then add it, along with the melted butter, sugar and salt to the flour.
