Not a bird owner here. Guinea pig owner actually. Still a pet and also needs vegetables: What I found is that playing around with how we present the vegetable is important.
Take carrots for example. Do they like them whole? Do they like them cut in length in half so they have one side that's the inside of the carrot and eat that (and leave the outside part?) Do they prefer small pieces and we have to chop them up into thin slices? How about shredded?
A former friend of mine said, she doesn't feed her budgies vegetables (aside from some cucumber and salad), because the budgies of a friend of hers doesn't eat their vegetables. Huh? Above I made 5 different suggestions to offer carrots. Don't come to me saying: "My pet doesn't like carrots." In how many ways have you offered carrots?
One thing I saw someone suggest is to start eating healthy foods in a bowl like you would a meal. When birds see you as their flock, they will immediately want what you're having. If you act like it's your meal and 'share' they'll feel included, and healthy foods will become associated with flock bonding too!
my bird absolutely loves dried peppers i cut them up to cockatiel sized pieces and stick em in the oven at the lowest setting until they are dry

Yep I think the best advice is "dont just wedge them through the cage bars and call it a day." It takes some creativity and perseverence. For my budgies, I made seed-heavy "pumpkin cookies" that naturally become foraging toys as they have to work hard to tear out the seeds, and eventually they like chewing on the pieces of pumpkin. Also, so much of it is texture too! I like chopping off the buds of the broccoli to resemble their seeds which I can mix in with either the seeds or the chop, depending on their progress. Meanwhile, if I fail to chop the veggies finely enough (and they need it REALLY fine!), they will not be interested. Sprouting some of their normal seeds might also be worth trying, although my birds were not at all interested until they were already on veggies.

I had a lot of success with one of my budgies by doing the 'play with the food in front of them' suggestion. Like Jamie says in the video, bell pepper worked GREAT for getting him to try it. I even half-tore a bit of it before offering it to him as if to say "I did my part, your turn'!
All three of my birds still enjoy that little game with peppers and thin slices of carrot, but they actually DO eat the seasonal feeding chop now too.
Worst thing ive heard about feeding birds was just give em nutrigrain bars and other granola grain bars without checking the sugar used in them

A few veggies isn’t nearly enough. It should be the other way around, mostly fresh veggies and a bit of seed on the side. Have you looked into BT’s seasonal feeding system? The chop recipes are incredible and their organic pellets are second to none!

It’s taken nearly 2 years of continuous trying to get my Timneh to eat vegetables. And like us they have thier like and dislikes. You need to stop feeding them nuts and seeds, only give them food at set times so they don’t have access to food 24, 7, they will look forward to dinner time and be more acceptable to eating what’s given to them over time. Because you’re sitting down to eat they will copy
Hi I am enjoying a little bit of seed mixed and their chop and I realized my pallets are throwing all the veggies on the floor. What they on their face they shake off and splatter everywhere, need to refresh on my downloads.
My conure loves 🍠 , green beans, bell peppers,, peas, and fruits.
Bird ate all the seed, left the salad 😔
I will have to try it with the food
