  • This basque cheese cake is creamy, rich and crustless. It tastes amazing in room temperature, but when it is a bit chilled the taste and texture bring it to another whole level. Is going to be one of my top favourite cheesecake from now on.

    750g Cream Cheese
    160g Sugar
    4 Eggs (total weight without egg shells 200g)
    400g Whipping Cream
    25g Cornstarch
    25g All Purpose Flour
    20g Lemon Juice

    Mike u r correct. I baked it yesterday n I have tried both version. Both taste different indeed. But I prefer it 2 be chilled. Room temperature is just as yummy. My family prefers the normal temp. Overall, both are just as good. Tq 4 ur recipe.

    I am not a cheesecake fan as most of the recipes use digestive biscuits or graham crackers, mixed with butter for the base, which I dislike, however this Basque cheesecake looks absolutely amazing.

      If you ever need to make a cheesecake that has a base of graham crackers and butter (usually a no bake cheesecake) try this tip.. After lining the base of tin with the crumbs and firmly compressing it, bake it until firm, cool and then add the filling and chill.. Gives a nice crunchy base..

      Ann Chovy, For me, this cheese cake taste incredibly amazing with starch and flour, so I guess is just personal taste. Every cheesecake is created for it's own purpose and taste. That is the reason why they even give it a name. Bake this basque 'burnt' cheese cake needs to be on hight temperature to achieve the burnt effect. So don't comment on how cheesecake should be and shouldn't be, and classified it the why you do. Let's leave it as personal preference. The world in evolving and you gonna hear there is more and more new cheesecake recipes in the future. How they build houses these days doesn't mean it has to be built like decades ago.

    This morning when I visited a friend, she was just starting to bake. I asked her what she'd making and she replied, "八十克" (80 grams) which left me astounded for 2 seconds. Then she explained Basque - burnt cheese cake! 🤣🤣

    Can you tell witch brand of cream cheese and whip cream do you use?
    Because I don’t know where to find cream cheese in Belgium 😅

      You can find Philadelphia cream cheese in every supermarket in Belgium. There are some other brands too besides Philadelphia. Even Lidl sell Philadelphia cream cheese. The Dutch word is “room kas”. 😊

      Heavy cream, double cream or whipping they are all the same depending on the country. As long the cream contain 40% fat or more, you are good to go.

    Hey Muchael the basque cheesecake looks delish they shld make a camera to taste and smell lol. At what temp.did you bake it and for how long? Thank you it always lo9ks so easy when you do it and can you put a topping on it to serve like dolce de leche or whipped cream thanks. I live in Trinidad and we love cheesecake be safe and be happy

      Thank you so much for your kind comment! For the Basque cheesecake, I typically bake it at a high temperature of around 200°C for 40 minutes. However, oven temperatures may vary, so it's always a good idea to keep an eye on it and adjust the baking time if needed.
      You can definitely add a topping to your Basque cheesecake to enhance its flavors. Dolce de leche or whipped cream would be fantastic choices to serve alongside. The creamy sweetness of dolce de leche or the lightness of whipped cream can complement the rich flavors of the cheesecake. Feel free to get creative with your toppings and enjoy!

      Preferably use any cream that contains 40% fat, and you're good to go. Otherwise, cream with a 35% fat content is also suitable.

    Unfortunately to my increasing frustration I don't manage to get a good result. My batter does not become thick enough, and my cake does not rise enough either.
    The moment I add the eggs the batter becomes very runny. How long do you have to use the handmixer after the eggs are in the batter.

      Lemon juice in Basque cheese cake is used primarily for flavoring and to add acidity to the batter. While vinegar can be a substitute for lemon juice in terms of adding acidity to the cake, it may not provide the same flavor as lemon juice. Lemon juice has a unique citrusy flavor that adds a bright and fresh taste to the cake, whereas vinegar can have a more pungent and sour taste.
      If you don't have lemon juice and still want to make Basque cheese cake, you could consider using other citrus juices as a substitute, such as lime or orange juice, which could provide a similar flavor profile to lemon juice. Alternatively, you could skip the lemon juice altogether and still make a delicious Basque cheese cake. While the lemon juice does add a certain flavor, it is not a crucial ingredient in the recipe and the cake will still turn out well without it.

    Oh, great. Basque Country, cradle of ancient warriors and knights. They are less likely to be immigrated by Portuguese and Mooro people, so they have light skin, red lips, high noses, deep eyes, and look more elegant than other autonomous regions of Spain.
    Especially, they are a people with a martial spirit and a princely spirit. Typically, A.Bilbao club never buys players originating outside the Basque country. Real Sosiedas as well as 1 opposing team in each Spanish city are royally sponsored vassals.
    The architecture, the landscape of the Basque Country and the Basques people are so beautiful.

    This is like the lava cake of cheesecake recipes. You make batter, throw it in the oven and just let the magic happen. None of that "keep it pretty use teh double boiler" unlike New York style or Souffle cheesecake. I love it.
    Now let's see how much I can wing this with just a 1-egg ratio. 😈

      Ann Chovy, to achieve the best result is to be disciplined enough the follow the instruction given by the recipe owner. If the recipe mentioned to use water bath, just follow. Certain recipe needs water bath to prevent the bake goods from drying up or drying too fast. And baking in low temperature you have to prolong your baking time. To achieve certain out come of your cake, I meant the appearance of the finished product, temperature plays a big part. When a recipe specifically ask to use water bath, please use it. When someone comes along say all cheese cake can be baked in low temperature, it is completely nuisance misguidance. Unless you want your cheese cake to look all the same.
