160g Sugar
4 Eggs (total weight without egg shells 200g)
400g Whipping Cream
25g Cornstarch
25g All Purpose Flour

Mike u r correct. I baked it yesterday n I have tried both version. Both taste different indeed. But I prefer it 2 be chilled. Room temperature is just as yummy. My family prefers the normal temp. Overall, both are just as good. Tq 4 ur recipe.

I am not a cheesecake fan as most of the recipes use digestive biscuits or graham crackers, mixed with butter for the base, which I dislike, however this Basque cheesecake looks absolutely amazing.

If you ever need to make a cheesecake that has a base of graham crackers and butter (usually a no bake cheesecake) try this tip.. After lining the base of tin with the crumbs and firmly compressing it, bake it until firm, cool and then add the filling and chill.. Gives a nice crunchy base..

Ann Chovy, For me, this cheese cake taste incredibly amazing with starch and flour, so I guess is just personal taste. Every cheesecake is created for it's own purpose and taste. That is the reason why they even give it a name. Bake this basque 'burnt' cheese cake needs to be on hight temperature to achieve the burnt effect. So don't comment on how cheesecake should be and shouldn't be, and classified it the why you do. Let's leave it as personal preference. The world in evolving and you gonna hear there is more and more new cheesecake recipes in the future. How they build houses these days doesn't mean it has to be built like decades ago.

You can find Philadelphia cream cheese in every supermarket in Belgium. There are some other brands too besides Philadelphia. Even Lidl sell Philadelphia cream cheese. The Dutch word is “room kas”. 😊

Heavy cream, double cream or whipping they are all the same depending on the country. As long the cream contain 40% fat or more, you are good to go.

Hey Muchael the basque cheesecake looks delish they shld make a camera to taste and smell lol. At what temp.did you bake it and for how long? For this recipe, you can replace the all purpose flour with cake flour.

Preferably use any cream that contains 40% fat, and you're good to go. Otherwise, cream with a 35% fat content is also suitable.

Unfortunately to my increasing frustration I don't manage to get a good result. My batter does not become thick enough, and my cake does not rise enough either.
The moment I add the eggs the batter becomes very runny. How long do you have to use the handmixer after the eggs are in the batter.

This is like the lava cake of cheesecake recipes. You make batter, throw it in the oven and just let the magic happen. None of that "keep it pretty use teh double boiler" unlike New York style or Souffle cheesecake. I love it.

Ann Chovy, to achieve the best result is to be disciplined enough the follow the instruction given by the recipe owner. If the recipe mentioned to use water bath, just follow. Certain recipe needs water bath to prevent the bake goods from drying up or drying too fast. And baking in low temperature you have to prolong your baking time. To achieve certain out come of your cake, I meant the appearance of the finished product, temperature plays a big part. When a recipe specifically ask to use water bath, please use it. When someone comes along say all cheese cake can be baked in low temperature, it is completely nuisance misguidance. Unless you want your cheese cake to look all the same.
