In this episode of Abbey's Kitchen, Abbey is joined by a very special guest Sara Lynn from The Domestic Geek. Abbey and Sara have been chatting about post workout snacks, which makes working out totally worth it. If you head on over to Sara Lynn's channel, you can check out Abbey's Protein Bars three ways and today on Abbey's Channel, they are going to be making three delicious energy bites. Sara Lynn will be making the same base ingredients and then will be flavouring them all like dessert. One of them in inspired by a lemon poppy seed muffin, a strawberry shortcake version, and finally oatmeal cookie.
Let's do it!
First up the lemon poppy seed energy bites. The base ingredients of all of these energy bites start with oats, almond flour, almond butter and finally honey. To keep these vegan, you can use agave or maple syrup. Then add some lemon zest and the juice in one lemon. Finally add poppy seed. Process until it reaches your desired consistency. Remove the blade and with your clean kitchen hands pack the mixture into small balls about one inch in size. To store these, keep in the refrigerator for up to a week. If you want to make a big batch you can pop them into the freezer.
Next up the strawberry shortcake energy bites. This uses all the same base ingredients but in this case adding chewy dried strawberries and vanilla protein powder. In a processor add oats, almond flavour, almond butter and honey. Next add dried strawberries, vanilla protein powder and vanilla extract. You could take this a step further by adding peanut butter instead of almond butter, it will taste like peanut butter and jelly. Pack them into small balls and store in the fridge.
Finally oatmeal cookie energy bites. Abbey is adamant that when you buy an oatmeal cookie it NEEDS raisins. In this recipe you can go either way. In this case Sara Lynn is using raisins in this classic oatmeal cookie recipe. It starts once again with oats in the food processor. Sara Lynn is only using some of the oats in the food processor and then plans on stirring in the rest of the oats later. Next add almond flour, almond butter and honey. For the cookie flavour, add in vanilla extract and cinnamon. Pulse until well mixed and fold in the rest of the oats in a mixing bowl. Next add raisins and pack into small balls and store in the fridge. Sara Lynn also recommends turning some of the oatmeal batter into the oven to make granola.
Sara Lynn and Abbey are very happy with these energy bites and will likely skip the gym to enjoy more of these bites.

Energy Bite Base
½ Cup Almond Flour
1 ½ Cups Oats
½ Cups Nut Butter
¼ Cup Honey
Lemon Poppyseed
2 lemons, zested
1 lemon, juiced
1 tbsp poppy seeds
Place all ingredients into your food processor and pulse until smooth. Transfer the mixture to a bowl. Roll into 1 inch balls and store in the refrigerator or freezer. Enjoy!
Strawberry Shortcake
1 Scoop vanilla protein powder
1 Cup dried strawberries, chopped
1 tsp vanilla
Place all ingredients into your food processor and pulse until smooth. Transfer the mixture to a bowl. Roll into 1 inch balls and store in the refrigerator or freezer. Enjoy!
Oatmeal Cookie
½ Cup raisins
1 tsp cinnamon
1 tsp vanilla
Set aside ½ cup of oats. Place all remaining ingredients into your food processor and pulse until smooth. Transfer the mixture to a bowl and fold in the raisins and remaining oats. Roll into 1 inch balls and store in the refrigerator or freezer. Enjoy! Хобби

5) banana, walnut
6).coconut, almond, chocolate.

Delicious, thanks for sharing! Personally I add a pinch of salt in mine Energy Bites, it enhance the flavours. Further, if you stick a fork into the lemon, you get more juice and its easier on your hand.

Any thoughts on what to use when swap out the nut when you have a nut allergy as well as coconut.
crochet_witch I think you can find sunflower seed butter or something like that. You might have to go to somewhere like Whole Foods to find it though and it might be expensive but I could be wrong about the price. Check and see at your grocery store near the butters and jams.

Anna Catharine Rutherford are you quinoa free too? If not, you can use quinoa flakes. Quinoa free too then you can add hemp powder to make it drier. It will give great extra healthy fats and omegas. I’d probably roll in some cinnamon and shredded unsweetened coconut because they may be sticky.

So, I got obsessed with no bake cookie dough and in the process went down the rabbit hole of uncooked flours...and there is a lot of potential contamination and tiny things. Do you precook the oats at all? If not, now that I mention it...do you think you should?

If you don't have protein powder what do you replace it with?
Could you substitute the almond flour for something less expensive?

Abbey, I'm trying to lose weight. I love these recipes both sets of recipes. But I'm afraid of the high calorie ingredients. How would I tweak it to impliment in a weight loss program and also be aware of portion control which I struggle with?
Dolly Perry hey Dolly! Totally understand. You could try cutting back on the sweetener and adding some more protein powder and instead of regular nut butter using powdered rehydrated peanut butter (I like PB2)

It just goes to show you can’t be too careful these days
If you are suffering from digestive issues I would not recommend eating these. Grains whether gluten free are not NEED to be cooked and processed correctly for digest ease. Eating raw grains is one of the most dangerous things you can do for your gut.
Heal Your Gut Guy yeah I used to get a bad stomach all the time in kindergarden because I would have raw oats in milk. Turns out I have coeliac disease, but I still react to gluten free ones if they are raw!
