Everytime I watch a skilled chef go through an onion like that in record time with a huge knife, I'm always amazed they still have all their fingers. It shouldn't surprise me. After 30-odd years as a programmer I type really, really fast and never once even *glance* at the keyboard. Everyone gets good at what they do a LOT. But jeez, I'd be hunting for bandages. 😀

Stroganoff can be tricky when you add sour cream. Remember to always temper it first! ie add a little hot mixture to the sour cream and stir. Skipping that step can make the cream to curdle.
@@monicamailman3796 Ah yes tempering. Learned how to do that in Home-Ec in 1976 when I was in highschool. Being how you're 3 weeks out of date, I already made the recipe and yes I tempered the sour cream. Thanks

Essen if you use baking soda to tenderize your meat it will become so tender no matter the cut. I use it on steaks, and beef products. Just sprinkle on the meat and cover and place in the refrigerator for about an hour. I vacuum seal it and leave it 24hours. Then you wash it very thoroughly in water till the baking soda is dissolved and washed away. That is a must. Then season and cook. You won’t taste any of the baking soda. Try it and if you don’t agree no harm done))
