thats what good food does. it brings together people :) we have a social cooking event in my town. some arabic folks, some german and now some ukrainians. only common language would be english but many older folks who go there dont speak it. so they use gestures and the goal of making something delicious together as theirs.

It's a street food, maybe you should go watch something like food from 4-5 stars hotels which there are many of them in Thailand as well.. but this level is clean enough for street foods, compared to many countries

Unique style and dishes for non South East country residents, though to have made it a little more informative in content they should have INCLUDED the names of individual ingredients as not all of us are fimiliar with all such ingredients alongwith Cost so that a Tourist could apportion one's budget accordingly. Visually most enticing and appetising.
I guess all of them are in Bangkok. The first one is in China Town. The second one is called ผัดไทยนรกแตก on Lad Ya, Klong San. No idea about the rest.

Looks like Oyster sauce, but I could be wrong lol
The brown sauce is the combination of tamarin soak with warm water plus chicken or pork bone stock. There is some sugar, and fish sauce.
