What are the camaras that capture 360 that I can use? I keep seeing Insta360 X4 but I'm not sure if that is the correct camera for the editing. I saw a video that captured the presence in a studio where I can see everyone by moving my phone, and I want to do the same thing for my video.

No not Really . For Person Tracking you would use a normal Tracker and track only the X Axis of the Image since you do not want to mess up the Horizon. You would use a Tracker, set it to Matchmove BG only and Edge Behavior "Wrap" Then open the Splines and delete all the Keyframes for Y. and connect the Tracker output to the media out. But i do not see a good use for following a person, since you turn the Viewers Head unwillingly....

How I export a 3d camera track 360 fbx ?
Use the FBX Exporter node. And the Click in the Top menu on Fusion "Render all Savers"
