I will try these. Can you add lemon and at what stage? I like the lemon/garlic one at our supermarket. My olive tree has olives on it for the first time! Just a bit excited 🙂

Yes, you can add lemon and raw or tosted garlic if you like, when the olives are mature after 60 to 70 days in brine. Once the olives are ready for consumption, dress them up with you favorite spices and the juice of half lemon for an extra zest.

Hi I have made a small amount. Have followed the instructions correctly. I am now at the final stage. I have boiled the water added the salt and cooled it. Now i have added the water to the jar with the olives ,garlic and bay leaf. They need to stay this way for a couple of months. I have noticed that after a few hours the water has gone cloudy. Is this normal? Giovanna.

How many kg in 3 tabsspoons of salt you are using please.

It doesn't matter how many kilograms (kg) of olives you are using,
what is important is the ratio. I use 100 gram of salt per liter of water.

Did you crack the olive before you put them in the water
With mine I cracked them. This video didn’t show this stage.
I also cracked mine called tzakistes
a gallon is 3,8 litres of water...you mean ca 3 litres, I guess?

Procedure for black olive pls merci
We make three cuts on the black olives as soon as you start the process. You do this before they go in the brine solution.

Γεια σου Ρούλα.
Η συνταγή βρίσκεται μέσα στο βίντεο. και είναι 3 κουταλιές της σούπας αλάτι για 2 κιλά πράσινες ωμές ελιές για τα δύο πρώτα στάδια. Το τελικό στάδιο είναι 100 g αλάτι για κάθε λίτρο νερού.
Βεβαιωθείτε ότι οι ελιές είναι πλήρως καλυμμένες με την αλατισμένη άλμη.
ΥΓ: Προσθέστε λίγες κουταλιές της σούπας λευκό ξύδι και λίγες
σούπας ελαιόλαδο για να διατηρηθεί καλύτερα η ελιά σε άλμη.
