    Do you think you're using a 10% brine? 1:10 ratio?

      Yes I do use a 1 to 10 method.
      2kg of green or black olives
      2 liters of water
      200g coarse salt
      200ml olive oil
      200ml of white vinegar

    Eating olives with the pit inside is like eating meat off the bone, it always tastes better. Leave it in.
