    why not try it until you find a balance that works? Isn't that the whole point of recipe development? That's why every bakery has cookies with different tastes and textures. I would definitely try it, i mean, i'm pretty sure it will NOT damage your machine, if you're using milk, cream, sugar, vanilla extract. And just let the sugar dissolve in the milk before mixing it all together. Or blend the sugar into powder before mixing it in.

    Why not try it? Test the theory instead of guessing at outcome?

    We are using a commercial soft serve mix, but can we add crushed (powdered?) cookies to infuse the flavor into the soft serve?

      We use this method for cereal milk flavors. Pour your mix into a bucket with one box of front loops, or fruity pebbles or whatever cereal you want and place in refrigerator for 24 hours, then you must STRAIN and PRESS the mixture so it is smooth and contains NO PARTICLES before adding to soft serve machine,

    In that case, which machines or brands are least prone to having these complications? Surely there must be some model that is a bit better suited for a diy recipe than others? Any recommendations?

    Anyone know a really good soft serve mix? We have tried a few and not in love with the taste. Anyone try the Gelato Lab products?

      I am about to try the Temptation vegan brand. I've also heard of Cloud Top organic dairy mix, but that was a few years ago, not sure if it's available anywhere . I believe Straus Creamery has organic dairy mixes as well. :) CoconutBliss I saw has one too. Never tried Gelato Lab Products.

    Great vid steve, short, sweet and direct to the point. Speaking of soft serve, is it safe to leave soft serve mix overnight in the machine if it is not sold out (for use again the next day). Also, for you, generally speaking, is soft serve ice cream more profitable than hard ice cream?

      There are heat treatment machines in market for safe to leave mix overnight. But who can sold out all mix everyday?? 🤔🤔 you need to find a lab to do trial & test rather than people answer your question in your actual situation.
      Soft serve should have more wastage than hard but lower prices in more markets & situations. Cheap American hard ice cream food cost are very very cheap too, so hard makes more money to the question. 👈🏿👈🏿 all are using cheap & low food cost wholesale products as sample to comment, genuine artisan or premium quality self made products are another world.

    I bought a soft serve machine it came from china we really love it , but I don’t I stand how to use the jam key the instructions is not clear can you tell how to work it.

    I have tried my own recipes in a soft serve machines. The vanilla one was successful but as soon as I tried strawberry and mango flavored mixes they failed. I still believe that you can do you just have to find the perfect spot for fat and solids and in no way can these machines tolerate bits or clumps ( strawberry seeds e.g.)

    do not use your own mix in these machines unless you are going to serve it fast. I did this and it turned into clay

    I don't get this video. At the beginning, you point out the important reasons why we would want to make our own base (to control the quality of ingredients, particulary in regards to being free from synthetic additives). Then you say it shouldn't be done. But people haven't always eaten factory food. So how did people make soft-serve before all these mass-produced, chemical-laden, commercial mixes become available? The truth is, there are restaurants that do make their own all-natural soft serve mixes. And there is a dairy company that makes an all-natural soft serve base. So it can be done, it's just a matter of finding the right recipe.
    (Btw, the reason I'm looking for a recipe and not buying the all-natural base sold by the dairy company, as I mentioned, is because I have a small shop but I'd have to buy their product in pallet quantities, pay to ship it refrigerated across country, and then find a way to store 2,000 lbs of frozen liquid product and use it all before it expires.)

      Hi Michael, did you ever find an answer, or a recipe for a homemade soft serve recipe for a commercial machine? I've been scouring the internet, and there is literally nothing out there. I'd love to know if you've tested anything that works!

      @@utmelanie read ice cream the 7th edition.
      All the info to formulate your own is in there.
      Trouble with blending your own is A; it's more expensive (sometimes considerably) and 2; you're then subject to the changes in season, cows milk isn't a standard product, it's standardised by dairies.
      The fat and solids contents change in milk due to the season, weather, available forage, breed of cow, health of the cow and more.
      It's a fair ask making your own dairy blend and having it be a consistent product and that's what customers want - consistency

      I get why people feel like they need to thoroughly explain, and I usually appreciate it. But, he's not offering any solutions .
