White chocolate has no actual cocoa, and the chocolate flavor is coming exclusively from cocoa butter. Defined by FDA standard identity: "must contain at least 20 percent cocoa butter, at least 14 percent total milk solids and at least 3.5 percent milkfat. It cannot consist of more than 55 percent nutritive carbohydrate sweetener.". It tips the scale for sugar content among all chocolate. Everything else in the brown spectrum has varying degrees of actual cocoa, with milk chocolate requiring "a minimum of 10% cocoa solids" in FDA standards. For instance, if you added 5% cocoa powder/solids to white chocolate, it would still technically be considered white even if visually it's tan. Within that brown spectrum when they measure how dark a chocolate, the % represents how much actual cocoa/cocoa solids relative to things like sugar/milk solids. IE 80% dark chocolate would mean 20% cocoa butter and/or other ingredients like sugar, milk solids etc. Dark chocolate and bakers chocolate have the highest cocoa and the lowest sugar content.
Cream cheese will require some refrigeration but will be fine at room temps of 70 degrees for a week or so. Heatwave conditions destroy all chocolate. Cream cheese ganache keeps well in the freezer for 3 months or more, but you must avoid air/frost/water getting in them. Coat them closer to when you plan to serve or deliver them. They will not do well in the mail if it's slow and their warehouses aren't climate controlled. Overnight mail in a "perishable" labeled ice pack box will guarantee best results unless the carriers are unreliable.
