I love that at 9:23 you say "keep in mind that the chocolate you scrape back into the bowl now can't be used for anyone with peanut allergies". It's very considerate of you.
Vincent Luc yeah I've got family. and went to school with kids who if someone touched peanut butter and touched the person with allergies they'd react. Doesn't have to be direct contact if peanut has come in contact with the general area it can still kill someone with a peanut allergy. or if someone eats peanuts or peanut butter and brushes their teeth but doesn't wash their face. and they kiss someone with a peanut allergy it can kill them. not something to mess around with

You need patience and a really good, steady hand for these creations! Thank you for a wonderful experience, I always wondered how truffles are made.
Great video. After being given an Instant Pot for Mother's Day (UK) from my wonderful son, I started making my own Dulce de Leche. Last night I made caramel filled chocolates. I used 50% cooking chocolate as I had some in the cupboard and 50% high cocoa content dark chocolate. I used the microwave to melt it. They came out perfect (beginners luck probably) but this has really got my interest in making my own sweets. This is awesome. Have you considered doing top ten liqueur chocolate truffles? Or is that something you've done already, and I just haven't seen it yet?

This video was great, I learned so much! I tried making caramel cups for Valentines day and they came out not too great presentation wise so decided to try truffles instead and was stumped as to how to get cool cream fillings and stuff, but seeing you do it for a ton of different recipes helped loads - would have never thought to make the filling and freeze it, and roll that into a ball then dip into chocolate, have always seen people just mix the chocolate with whatever filling but so excited I can do cream or flavor filling candies now! Can't wait to try this!

I’m curious, for the strawberry ganache can I use a dehydrated strawberry power added to the White chocolate instead of the fresh strawberries? Or maybe add powdered strawberry to the fresh to add more strawberry flavor and thicken up the ganache?
Powdered would give you a more artificial flavour, and it still wouldn't come through as much as the fresh. Ganache thickens up on its own, provided it has enough chocolate. You can also put it in the fridge. I would suggest just using fresh.
I love that at 9:23 you say "keep in mind that the chocolate you scrape back into the bowl now can't be used for anyone with peanut allergies". It's very considerate of you.
Jennifer Reeves yes it is nice of her but the chocolate that was scraped of never touched the peanut butter.

Powdered would give you a more artificial flavour, and it still wouldn't come through as much as the fresh. Ganache thickens up on its own, provided it has enough chocolate. You can also put it in the fridge. I would suggest just using fresh.
