This is almost like the pig pickin cake that I learned to make when I was still living in coastal NC. The only difference is that inside the cake it has mandarin oranges & that it is a 2 layer cake. It's been awhile since I made it. Thanks for the reminder

Yummm Meme!! I have made the cake and I use melted butter instead of vegetable oil ( oh my goodness) I luv to poke hole and add some heavy cream with pineapple juice ( mixed well and pour over cake) Everything else just like you make yummmm 🙏
When I make this, I prick the cooked sponge cake with a knitting needle then pour over some warm pineapple juice - turns it into a Pineapple Drizzle Cake. Yum!

It’s very evident in your vids you love to cook.Here’s something you may want to experiment with one day probably 20 years ago I poured a cake mix into a gram cracker pie crust and backed it then icing took it to work everyone loved it and ask what it was and I just said pake lol a cross between a pie and cake but it was delicious never did perfect it but that I’d share that idea and maybe you could experiment with it and perfect it the cake above would probably be delicious that way just a idea

I wanted to share with you something I found out bc I noticed your cake sank in the middle. I googled it and it’s bc we over beat the batter. So much air gets in and it cannot hold onto that air causing the cake to collapse. Not enough beating will keep cakes from rising at all. Please don’t be offended. I was curious and wanted to know. Maybe it will help you too. I appreciate anything people can pass on to me that might help me in the kitchen. We’re never too experienced to keep learning. Thank you for this recipe. I love pineapple in anything. This is perfect for spring and summer!

MeMe is right about cracking eggs...years ago I was making a cake with my wife and just cracked an egg into the batter and it was rotten...first and only time this has happened, but the yolk was black and the smell beyond description....better safe than sorry....crack those eggs one at a time.
