I cooked my 21 lb Darden ham using the oven method, uncovered and the skin turned too dark. Next year, I will cover the ham during part of the long cook. Great instructions here. This was not a video on how to make a yankee style glazed boiled ham. This is the real deal country ham. The only reason to soak one over night is to re-hydrate it a little, not pull salt out of it. If you want to watch a video of a "glazed " country ham, watch the one Mrs. Edwards made.
no soaking ? this will be extra salty! seems too easy...try boiling with apple cider, burbon and some spices - bay leaf, peppercorns, big onion, cloves and allspice berries. I think a better way.
soak your ham folks for about two to three days changing water twice a day if not shit will be so salty you will have high blood pressure on your first bite...i by Edwards ham all the time sliced at the deli and its perfect way less salt then the Smithfield ham that's sliced at the deli as a matter of fact i bought a pound today
