    It looks delicious. Born and raised in the south. At Christmas we'd always have abacked country ham, turkey, and sweet ham with pineapples and cherries on top. Never had a country ham prepared your way, but it looks delicious and I'm going to try it.

    Growing up we always had a whole country ham for Christmas. I'd kill for a thick ol' slab of country ham in a buttered biscuit. It was always a special treat. I love it! Fried slices are good too but can't compare to off the hock.

      I soak for 1 day, changing the water. Then I boil 20min/pound.. then roast it...and it's still salty

    Thank you. I actually never prepared one. But I buy from the store and have them sliced it and I use it as flavoring for cooking. It is rather salty compared to the regular wet hams.

    Which country ham is less salty, would you suggest, Smithfield Country Ham OR Clifty Farm Ham. What's your experience.

      I am not familiar with Clifty Farm Ham. I have found all country hams to be salty because the salt is how they are preserved. I cannot say one brand is less salty than another comparing the brand I have used. This also includes our home preserved hams.

      I buy Fricks Whole or portion hams from Washington Mo. I smoke them 5 hours @ 250 on a big Green Egg. The night before inject it with a cup of maple syrup and mop on a paste of syrup oil Jack Daniels whiskey onion powder paprika course black pepper.Check out Dave Fricks you tube video on how to carve a whole bone in ham

      I’ve had the Clifty Farms and it was VERY salty. We bought a Harpers country ham made here in Kentucky and it was perfect, we didn’t even have to cook out the salt. Unfortunately you can’t buy the Harpers hams anymore.

    we in North Carliona we call that kind of ham a picnic ham, country ham you can make "RED EYE GRAVEY

      That is very interesting. When we make red eye gravy we just call it country ham with red eye gravy. I find it interesting that country ham is so popular in many parts of the world and they often use different terms to refer to it. Thanks for your comment!

    Country Ham prepared like a reg Ham? Never heard such crap!
