Thank you very much. I have been doing a lot of research on how to cook country hams and I believe you have the best method. I have read my many historical recipes about cooking country hams and your process is very similar, only updated for modern appliances/materials.
You're welcome Matt. You're right, this is the traditional method for preparing country hams. I learned this in the late eighties from my mother-in-law, a tobacco farmer's wife in Southern Virginia. I ended up taking over cooking the ham for holidays and events many years ago. Getting a good fresh ham is key and Clifty Farms delivers every year! Good Luck!
I have finished cooking my ham yesterday and I am shocked at how good it is. I followed your video and the results were delicious. This was my first time cooking one as well as eating, not a lot of country hams in Pennsylvania. Again, thank you so much!

Some folks are predisposed to thinking country ham is tough and salty and won't try it. So I don't tell people it's country ham until they've eaten it and ask where I got the ham.
I have to take exception with your statement about a ham hanging around for a year not being able to cook up good. A year old country ham is a premium ham unlike Clifty farm produces. Their hams are processed and ready for sale in 55 days. Another good source for Country hams may order is burger smokehouse from California Missouri. Have a great holiday season.
You could. You do need something else besides the foil because the ham will leak out fluids while it cools. Once the ham cools, and after the first carving, I reverse the foil and plastic wrap, plastic wrap on first, then the foil. Seems to preserve the moisture better that way after that.

Never put aluminum foil on a country ham! It will become a battery, you can observe the arc holes in the foil!
I would Save all that Fat and use in My Big pot of Brown beans. Or White ...
I order my country hams from www.cliftyfarm.com. I've had great luck getting fresh country hams mail ordered for family in the lower 48.
