This is the traditional way to prepare a country ham. Salt is used for curing ham, but if most of the salt reaches the table, you have failed in preparing a traditional country ham. This is an easy, but time consuming method that modern businesses usually can't afford to follow.

You should be running a vehicle DVR for liability purposes. These devices are cheap, they over-write as they run out of space and auto-start when you turn the ignition key.

Coffin prop, built in 2011 is fully working, Jumping Ghoul built in 2008 is fully working, but the oldest prop, the simple 2007 "Rat-Can" (Trash Can Trauma) remains the scare champ.

We've got another addition to the rat can and jumping ghoul. This is just a preview of the mechanics of the prop. Door and pneumatic are on seperate siwtches, but there are safety switches to prevent the prop from being fired when door isn't open and the door can't close when the prop is upright. We have a sound system we'll incorporate after the mechanics shake out.

I make a turkey and a country ham for Thanksgiving. I watch this every year to make sure I don’t forget something. My family loves it.. turns out perfect every time. Thanks for the video!

I have to take exception with your statement about a ham hanging around for a year not being able to cook up good. A year old country ham is a premium ham unlike Clifty farm produces. Their hams are processed and ready for sale in 55 days. Another good source for Country hams may order is burger smokehouse from California Missouri. Have a great holiday season.

Thank you for doing this John! I have been using the Allgood method since you taught it to me 25+ years ago. Thank you. What a gift to retain these old family recipes. Great family tradition plus the ham and bean soup after!!!! One thing most folks don't get, hams are just as variable as buying a lb of bacon. Thats why we swear by Clifty Farms. When they ship you direct you open the box and smell sweet bacon. When you hold it is so beautifully plump right to the squish ham. Getting quality ham is a huge part. Clifty Farms. Ask your grocer to bring one in for you. cliftyfarm.com/. IMO If you are in the store and it will not easily dent to the touch and smell sweet, don't buy it. I want to mention that we have been slicing the ham the next day and vacuum sealing for the freezer. Ultimate preservation of moisture. I have noticed that I like what happens when you flash freeze it the next day. Really preserves it and makes it more tender and melty... Packs last 6 months plus. Great finely chopped and scrambled with eggs, big pieces in ham biscuit packs or just out of the pack hidden in the back of the sandwhich drawer. I have found smaller packs are hidden easier....;-)

Never put aluminum foil on a country ham! It will become a battery, you can observe the arc holes in the foil!
I would Save all that Fat and use in My Big pot of Brown beans. Or White ...

Thank you very much. I have been doing a lot of research on how to cook country hams and I believe you have the best method. I have read my many historical recipes about cooking country hams and your process is very similar, only updated for modern appliances/materials.
You're welcome Matt. You're right, this is the traditional method for preparing country hams. I learned this in the late eighties from my mother-in-law, a tobacco farmer's wife in Southern Virginia. I ended up taking over cooking the ham for holidays and events many years ago. Getting a good fresh ham is key and Clifty Farms delivers every year! Good Luck!

@@matt67524 You're quite welcome! Thanks for letting me know how it turned out! If you have a party and show up with a platter of ham on fresh dinner rolls, you'll be a hero! Some folks are predisposed to thinking country ham is tough and salty and won't try it. So I don't tell people it's country ham until they've eaten it and ask where I got the ham.

imho why not wrap in 1 layer of aluminum foil and then drop it in a couple of Walmart bags !!!
You could. You do need something else besides the foil because the ham will leak out fluids while it cools. Once the ham cools, and after the first carving, I reverse the foil and plastic wrap, plastic wrap on first, then the foil. Seems to preserve the moisture better that way after that.
I order my country hams from www.cliftyfarm.com. I've had great luck getting fresh country hams mail ordered for family in the lower 48.

Find a US based vendor if you can. It's really small, I mounted it high on the windshield behind the rear view mirror. If you're standing outside the car, you would hardly notice there was anything there.

They're all home built. I originally fitted them with motion sensors, but they were really finicky and would act differently as it got darker. In 2010, I built an electronic control box with a USB interface that controls the props. We just sit inside and watch the cameras and click buttons to fire the props. That's so much better because you can distract people with one prop and nail them with another. As the props get bigger, you really want to control when they fire.
Where did you get that trash can prop? Or if you made it, is it motion sensored?
