what an experience!!! ❤️🔥 I couldn’t come to Jamaica and not learn about their famous dish jerk. the art of jerk cooking, involves marinating meat in a mixture of spices and slow-cooking it over pimento wood. jerk originated with indigenous peoples of Jamaica from the Arawak, Taíno tribes, and was carried forward by the Jamaican Maroons in the 17th century. The Maroons were Africans that broke free from enslavement in Jamaica & took refuge in the mountains, forging self sufficient communities & connecting deeply with the land. The jerk marinated meats were often cooked slowly in underground oven pits to minimize the smoke so that not to give their locations away. It was also a technique used to preserve meat. Jerk is more than just a dish!!

I am convinced that the envorinemnt in which you eat the food including the people you are eating with strongly affects the taste and overall experience of the food. When you eat in good company, in lush nature like this you get properly nourished on all levels. This was a treat to watch. 👌

This is a really nice series, Gaz and Tom. We’ve all seen and heard the connection you had with Jamaica, even before you visited her. You seemed to have a special love for Jamaican food. Observing you in each one of the Jamaican episodes you were literally glowing. You were definitely in your culinary element and genuinely enjoyed it. Your experience makes it quite inviting to visit Jamaica. Other than being able to enjoy the motherland, the key would be having the same connections with someone similar to what you had in order to take advantage of eating well prepared & traditional vegetarian-grade foods.
I am going to make this in my 1st barbaque of this year. In the Netherlands, bbq time is starting in any moment...when my friends put on their meat, I am going to bring this ;)

It's so delish! When I was returning home after a holiday in Jamaica (maaaaany years ago), I stuffed half of my suitcase with coffee and spices! LOL So good. It was interesting to see them using dates instead of usual browning in the jerk mix. Thanks for the series🤩

All ingredients and spices are amazing …the mushrooms are way too burnt to my taste and also burnt is not healthy as it sticks to your cells and cannot be eliminated. So I guess we can just adjust the cooking to our liking! Thanks for sharing…I will surely try this recipe (less burning part) ❤️🙏❤️
