Fried chicken should be eaten with the sweet chilli sauce ( the orange one ) , The brown one usually eat with the boil chicken. Black sauce can season both boil and fried chicken.
I asked the uber (I think its uber) driver in Bangkok where good food is and I was surprised he said in the food court of shopping malls. The food is great. Also loved 711 food in Bangkok
one thing about Thailand is that the street food in Thailand is way better than the ones inside the mall and most expensive restaurants. In the Philippines it's different, food inside restaurants are usually better than in karinderyas or food in street food stalls.
I think it's Pad Phed Minced pork with bamboo shoot not a Pad Kaproa becuase I didn't see any basil leaves. Moreover, I saw some onions and Bamboo shoot that the ingredient of Pad Phed.
The soy sauce and chilli should be poured directly on fried chickens first, then on rice if you want. (prioritized)... 🙂 The taste should come out from the chickens than from rice. (to make this menu more delicious)

But if you guys run it at a loss, I will give you a bonus." 😊 The idea is to do whatever it takes to get people to come to the mall. Loss (20m thb/a yr) is okay, but there must be people walking around. 😊 The management team therefore does not charge rent for the stall. This is why the food prices here are so cheap. 👍😉

Glass noodle is made from green bean while the major component of other noodles are mainly from rice flour.
The pink balls in sweet dish are made from tapioca flour and a piece of fruit truffle inside.

for dry noodles I used to put two tablespoons of fish sauce, two spoons of chili flakes, 1 teaspoon of sugar and 1 spoonfull of vinegar

on the noodles it's best to put the fish sauce and chili powder - that's where you'll get the taste from
The "molasses" is most likely dark soy sauce which sometimes are seasoned for better flavours. Molasses is not a thing here in Asia 😅
