@Kallway that Powder name is Sumak/Sumac, you can go to any grocery shop Turkish, Iranian,or Marrekesh/Moroccan shop an ask for Red Sumac, there is also one light in colour, that is from IRAN, very Sour that is 🤤🤤🤤

Not sure about the guy using the lavash to soak up the raw meat juice then using the same lavash to put the cooked meat on to serve to customers.
I also questioned this many times before. Raw is raw and not suited for commercial serving. Your own backyard is a different story 😅
I was thinking the same thing; that is cross-contamination. You should never have raw & cooked food together.
