brother, sa amin sa mandaluyong, kapag ganyang luto and nilagyan ng itlog, ang tawag nmin diyan is, "KARDILLO", ang sasiado nmin walang itlog, just plain onions, tomatoes, garlic and ginger, and we add 2-3 bay leaves! often we use sand goby (biya) for this recipe, but since sand gobies are now rare in the philippines, pwede na din, maski na ano. sa sarsiado nman, we generally use fishes like, kitang (spotted scat (which is also very rare nowadays in the philippines), pompano is also good and small trevallies! in cooking sarsiado, we add little worcestershire sauce and we also use worcestershire sauce with patis as sawsawan. try it bro, i guarantee you, you'll love it! cooking sarsiado and kadillo's almost the same, minus the egg and added worcestershire sauce. just make sure to add a little water, with fish and let it simmer until sauce is almost dry and a little of bacon grease/oil. if you've tried it, let me know if you liked it! 😊

Very nice video as usual! Also just to add about fish slits, it helps with the fish skin shrinkage during frying so the fish won't curl or worse lol. Learned this the hard way today 😂

I agree with you Chef Vanjo that bangus is full of bones and telipia is lesser in bones. If you experienced swallowing a bangus bones you will be scared to eat the second time. I love how you ate walang pakimi nga. Akoy na gutom tuloy. 🙏
What I know the difference between sarsiado and cardillo is the addition of egg. It is called cardillo when you add egg. Just for info. I always watch your cooking and I enjoy it everytime. I am here in San Diego.
