    So I made rice paper spring rolls for the first time a week ago and used warm water because that's what Lisa nyugen said lol. It went great but after a while when the water cooled down, I was too lazy to warm it up again so I let the water be. The spring rolls still rolled perfectly 🤷🏻 so I'm not doing the warm water thing the next time. Just gonna use room temp water

      Yeah, I’ve seen some people say it makes the texture of the rice paper change but I’ve honestly felt no difference when eating it.

    it's just a preference. Warm water will soften the rice paper faster so if you can't do it quickly, use cold water instead. But I always use warm water to make spring rolls and never have it fall apart like the lady said.

    I've made spring rolls for years with my family and it's all preference. Warm water makes the rice paper soften faster, so if you need to roll a lot quickly (like to make for other family members) it's definitely better. If you're still getting used to rolling them, cold water softens the paper slowly so you can take your time and get the hang of how to roll them.

    i think the temperature of water surely supposed to be lukewarm to cold (not ice cold) because if your water is too hot it's eventually gonna _cook_ the rice paper, if it's too cold it's going to break the whole thing. also don't left the paper too long unattended cause its probably the biggest reason on why did it got super messed up

      @@alja4991 Still, when you're going to compare French culture to Vietnamese culture, people will still flock to French culture because, well, need I even explain?
      There's also the mindset that Western is better almost everywhere you go, making the exposure unproportionate, anything that's associated with France will always get more exposure.
      May I ask you when was the last time people went crazy over Vietnamese culture?

      You’re correct. I watch her. She definitely says warm water is needed and as a kid that was her duty to keep the water warm and she’d have to her up and bring back warm water

      I watched her using warm water. But after watching this short I did google search and it says rice paper should be dipped in cold water to absorb moisture slowly so they don't get soggy.

      As a vietnamese. Cold water is suppose to be used. When I was young I used hot water. Which makes the rice paper soften quicker but you can burn yourself if not careful with the water temp. Cold water is easier to use. And wrapping the rice paper is easier when it's still stiff. When you finish wrapping and put it aside for a while the rice paper will soften by itself probably in 2 mins. If you try to wrap the rice paper when it's soften it's easy to rip and tear them.

    There are different types of rice paper
    1. Required hot water
    2. Required water
    3. Doesn’t require water
    The general rule of thumb is temperature = speed of roller
    I can assemble and roll pretty quickly so I prefer hot water as it soften it up fast. If you’re slower I would recommend room temperature water.
    We also have an thinner rice paper that doesn’t require water and soften ups with just the moistures from the ingredients.
    There also type of rice paper that is meant to be eaten hard. We use it to make BÁNH TRÁNG TRỘN which is basically an rice paper salad and it usually contains chilli, green mango, peanuts and lime. It’s an popular street food in Vietnam. 😂

    i just started using room temp water this year. waaaayyyyy easier than using hot/warm water. no need to rush things when making the rolls

    OK I’m sure people already said this but it really doesn’t matter what temp you use. The paper is so thin that it’s gonna soften by the time you’re done putting the fillings anyways. Not to mention, different types/brands of rice paper soften at different speed so the only thing you need to get right is essentially the timing of when to roll.
    Also to those referencing Lisa and misspelling her last name, it’s Lisa NGUYEN lol. It’s a small thing but it does bother me that people are getting a very popular last name in my country wrong so here y’a go.

    Ngl, it depends on the rice paper itself. Recently got a brand that just refuses to work in cold water and holds even in hot water. Other brands I didn't have that issue but tended to tear more. All same ingredients so maybe it's about thickness or something.

    Bruh tbh just use room temp, there's not much difference (unless there's instructions on your packaging then just follow that lol). Normally, if you use hot/warm water it'll be too sticky for you to form a roll, and cold water might need more dunks.

    just use any water that is convenient. I'm a local, i know. Use any water that is safe to drink of course, cool/room temp water is fine, cause while u pick ur ingredients, it will soften by the time u done. If use warm, it's gonna be softer, but also kinda more fragile since the rice would kinda "bloom"? Like it is more soft?

    I use warm water when I do spring rolls. But if you do some special dishes where you want some time before the rice paper absorb water than do it with cold water. Also there is no real rule to with what kind of water you dunk it in. I mean I saw my mom dip it in beer for summer rolls. I don't question it

    Another note, the thickness of the rice paper can vary quite a lot.
    If you're new, Greenland is super thick and doesn't tear easily. The Rose brand is super thin so best if you are experienced and can work quickly as it will set pretty fast.

    Cold Water makes for Chenier texture. Hot water softer. Trick is too not let them sit too long in the water, if its hot.
    But apparently in Vietnam they dont dunk. The moisture from freshly washed green moisten then rice paper.

    Honestly doesn't matter if it's hot or cold just as long as you just make it wet and shake off the excess water immediately. A soggy rice paper is not good 😃

    You're not supposed to use hot water, it's supposed to be warm That's why the rice paper dies instantly, also you're supposed to quickly dip them in the water and instantly remove

    This is how I do it and I’m always surprised by how many recipes I see calling for warm or even hot water. And yeah, only let it soak until it softens a little because it keeps softening on whatever surface you put it on.

    If you use hot water, it cooks the rice paper and you can actually still eat the spring rolls throughout the day. If you use cold water, it’ll harden in 30 minutes.

    My family always uses warm water but I get my own cold water, lol. It’s so much easier to get a neat roll when the paper starts out a little firm, plus it stretches less so the shape isn’t as wonky and is less likely to tear from being stretched

    I used to despise spring rolls as a kid because I cant eat the raw veggies so I would just drown my rice paper until its soggy then eat it whole, I still do that to this day.

    I work In a Japanese restaurant and we make summer rolls and we use not water for 1-3 secs. Literally just faster. It does not matter bro

    It’s different for everyone, if ur a slow wrapper use cold water and if you are quick and used to wrapping, use warm water. Only use hot water if you are Eminem level..

    Maybe the water should not be warm that could destroy the rice paper and the rolling process you don't want the rice paper to soften itself and break the mold that keeps it together just a thought

    You just need to put a piece of water on your hand to rub the rice paper without putting it directly in the water so it will lose its taste and it will be lighter.

    All these comments are ridiculous. The temperature doesn't matter. By the time you're done assembling your spring roll the wrapper will have soften regardless of water temperature.

    I tired rice paper today. All I have to say if you youve never tried and and have a texture issue this is NOT for you!!! I almost threw up after trying a recipe with rice paper. NOBODY TELLS YOU ITS SLIMY!!
