I thin my sheets down to 4. Dry the sheets for about 20-30min, and my noodles always stick together, as to where I have to unzip them. Any tips or tricks to get the noodles to come out separately, like you have it on the video?

Why don't you use the stand mixer to make the dough?
You forgot a key step. Let the dough rest for at least a half hour.
