DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE in our Vol. 2 Cookbook:
Texas Hash with Beans
1 ONION CHOPPED
3 TBSP. BELL PEPPER CHOPPED
3 TBSP. OLIVE OIL
1.5 LB. GROUND CHUCK
1 1/2 CUP HOT BOILING WATER
1 KNORR BEEF BOUILLON CUBE
1 TBSP CHILI POWDER
14 OZ CAN DICED TOMATOES
14 OZ CAN KIDNEY BEANS (DRAINED)
2 TSP. SALT
1 TSP. BLACK PEPPER
1 CUP UNCOOKED RICE
1-8 OZ. PACKAGE OF GRATED CHEESE (MEXICAN BLEND)
In a large skillet sauté onion and pepper in olive oil for 4-5 minutes. Add ground beef cook until separated and brown. Drain grease off beef. Bring water to a boil and add bouillon cube- mix well. In a separate large bowl combine water with bullion- mix, chili powder, diced tomatoes, kidney beans, salt, pepper, rice and mix well. Add half of meat mixture to this bowl and stir. Spray a 4-5-quart baking dish with cooking spray. Pour contents of large bowl containing beans, rice, tomatoes, etc... into baking dish. Now sprinkle entire top with shredded cheese and top with remaining meat. Bake at 350 for 45 minutes. Serves 6-8

I made this tonight for my family. The only change I made was I didn't have bullion cubes so I used beef broth. I loved it, they did not, so you know what...I'll enjoy the rest of it myself! Thanks for the great recipe!

I made this tonight for dinner and it was so delicious. It’s a flexible recipe too. I had kidney beans in chili sauce that I used. Plus instead of plain rice I use a packet of Spanish rice mix I had and it still turned out soo delicious. Thanks for sharing your recipe with everyone
Hi Tammy, My mother always made a dish very similar to this only she didn't put the beans in it she would always fix cabbage and pinto beans and cornbread with it , it was delicious I make it every once in a while the way she did but I will have to give your recipe a try it looks delicious.

Corn would be a good addition too
Add a 1 tsps of cumin with a tsps of garlic, you will love it! Then eat it with tortilla chips. Extra nummy!
What a great can opener!
I've made this for years for my family! They love it made with Chicken, Fire Roasted Diced Tomatoes, Whole Kernal Corn Cummin, Chili Beans or Black Beans! They like it spiced up a little so sometimes I'll add my Taco Mix I make myself! They like that Mexican touch and it's so good! I've made it just like you did with the Ground Chuck! I don't like mine dry either Tammy! It's so good any way you make it! My Mama used to make this for all us kids! It feeds a large family and we sure had one! Lol. I haven't made this in 3-4 months! I need to make a big pan and put into smaller pans and put in the freezer along with my other foods! I put up alot of food for us and for my Kids, Grandkids and Great Grandbabies! My one granddaughter has 3 babies ages 19 months, 2 1/2 yrs and 4 yrs old and she's sick and having alot of female problems! Ya'll please Pray for her! Thank you Tammy for reminding me that I need make this! It is really a good meal ya'll. Don't be afraid to play around with it to make it your own! Even Italian with Chicken and Zesty Italian Dressing! I bake Chicken Fingers or Strips in the Zesty Italian Dressing and it's so delicious! Add a little Italian Seasoning to your Chicken and Pour the Dressing over the Chicken, cover and bake at 375° till done. Remove Foil, Add some Mozzarella Cheese and pop back in oven just long enough to melt and lightly Brown the Cheese! It taste so good with a pasta or rice with a little bit of the drippings of the Dressing from the Chicken! Yummy!! Simple but delicious! I have to do easier cooking now at my age and my health! 70's is giving me a hard time! Lol. God Bless Ya'll Tammy n Chris! 🙏🙏❤❤

Here in Texas I use Rotel tomatoes and Jalapeño Ranch Style beans… kick it up a bit… don’t forget the Pepper Jack cheese!
My grandmother lived in the kitchen, Italian, straight off the boat, 13 kids, what a cook she was, loved going to visit, wasn’t often, to far away, but some very good tips and memories from her. Looks yummy is right.

Hi Tammy, enjoy your channel. I noticed your address. I have a lot of Kin in Cedartown! My Mothers side of the family. Family name,McCollum ,Galloway ,Owen . I was born in Rome ,Ga. Most of the family lived out in Route 3 across from the National Guard Armory. Spent many Summers in Cedartown. I grew up in San Francisco. Hey Tammy I would have cooked the beef first and drained if then added the onions and peppers ! You lose so much flavor when you first cook them together at first 😂

Hi Tammy, I see you leave your bacon grease on the kitchen counter by the stove. I put mine in the fridge because I'm afraid of it going rancid, should I just leave it on the counter like you do or continue to put it in the fridge? I probably don't use it as often as you do so that's another reason I kept it in my fridge. Also, can I use another type of bean, I'm not a fan of kidney beans because the skins are so tough to me...I Love you video's and thanks for any help! 🙂
