I picked up a pie a couple years ago, it was awesome. First off, this is take out only, but you can bring your pie across the street to a bar and have a couple of beers while chowing down. The other thing is the oven; look at the arch that lets the heat go up and curl down the sides to the floor of the oven, the flow of the hot air helps to crisp the crust. I prefer a well done pizza with a crispy crust. The owner mentioned this oven was originally meant for coal, but as he explained, his father died at 57 and he attributed it to the coal dust and fumes. Many years ago, he converted the oven to gas. Anyone passing through on the NJ Turnpike, it's right off the Elizabeth exit (12??), it's well worth a detour. This guy is passionate about his craft, he deserves to be open 4 days a week and live life on his terms.
A true pizzaiolo - these guys are few and far between but when you find them they're special. They might not always deliver 9+ scores but they never ever have a day where the quality dips, they serve consistent >8's for decades and any score above that is about personal preferance imo
@fuiers well, I've noticed that usually his 1 bite is the first bite, then immediately after without really chewing, a bite of the crust. So one bite, generally means one mouth full. But, sometimes he needs a few bites to get a real feel. All in all, he's geeking&just goes with it now.
That pie was cooked to perfection based on Dave’s own preference. If you look up pizza in the Portnoy Pizza Dictionary, you’d see a picture of Al Santillo. How he gave that an 8.3 is beyond me. He was shorted 1.0 in my opinion. That probably should be a 9.3. Cmon Dave...Give Al a do-over.

I live close to this place and it is a New Jersey staple. He is actually the nicest guy in the world and remembers just about all of his regulars names. He talks to everybody that comes in.

Al is amazing! I ventured in there one May Friday in 2018. There was so much to choose from, I asked Al to choose for me! I had the pleasure of waiting in the shop and talking with him and his lovely wife! He made me the most delicious Sicilian, well done with Pepperoni. It was amazing!! Al is an artist and has amazing pride in his craft. Santillo's is worth the trip!

I live close to this place and it is a New Jersey staple. He is actually the nicest guy in the world and remembers just about all of his regulars names. He talks to everybody that comes in.
Kinda like Vito and Nick's. My favorite in Chicago.

Al is amazing! I ventured in there one May Friday in 2018. There was so much to choose from, I asked Al to choose for me! I had the pleasure of waiting in the shop and talking with him and his lovely wife! He made me the most delicious Sicilian, well done with Pepperoni. It was amazing!! Al is an artist and has amazing pride in his craft. Santillo's is worth the trip!

I remember when they just made bread. My brother-in-law and sister had an Italian market in Peters Town and got their bread delivery from them. Later they began making the best Sicilian pie ever. My mother would send me there to buy dough for her own baking. Legend

All so proud of their family and their business (their father and mother and their sons and daughters) and the products they put out. Not every Italian guy is out there making pizza but that doesn't matter. No matter what they're doing they bring their A game and I love it.
