    I watch my sugar, so I wait until the first ferment smells like vinegar, then I do not use the Kefir grains in the 2nd ferment, but in the 2nd ferment the micro Kefir grains that go through the strainer multiply and get larger during the 2nd ferment, and some are on the bottom of the 2nd ferment, even though it is in the fridge. I use ginger, lemons, limes, cranberries--lower in sugar in my 2nd ferment. Today, I added raw carrots that I put in a blender--way to go for the vitamin A, added that to my water Kefir after it was done. I realized that I did not have enough vitamin A in my diet, so this was a good option, tastes really great. I also use stevia to sweeten sometimes. I love this water Kefir drink, and I do not drink soda anymore since water Kefir is healthier. I use a lot of organic garlic and organic onion also in the first ferment, it does not smell after the first ferment and there is no garlic/onion taste after the 2nd ferment, but ginger, garlic and onions are probiotics boosters, so I use them. Thanks to the many videos on water Kefir for helpful ideas.

    I put a TINY bit of Redmonds salt in my batch. Like 1/32 of a tsp. It was recommended by one set of grains I bot. It really helps the grains to ferment faster, they seem healthier. Adding a pinch of brown sugar or molasses helps fortify the grains too. Mine only take 1day to ferment, i kno wen its ready by the bubbles wen I bump the jar. I add 1/8 cup pure grape juice to my kefir water for the 2nd ferment. In 2 days I have the yummiest grape soda. Water Kefir heals sick kidneys. My DIL was in the hosp with kidney failure & they told her she needs to start making water Kefir.

    Mary, you exude charisma and warmth and I love your step by step, easily followed, guidance. Thank you so much. Watching I feel like I’m a visitor to your home which,being elderly, relieves the loneliness I feel these days. I look forward to trying. Your water kefir method. I’m blessed in that our water supply is from an artesian well and I’ve never tasted water as lovely. We have it tested regularly and fortunately no issues have been detected. Luckily, living in ‘The Emerald Isle’, noted for its abundance of rain, we have no fear of our well running dry.😀

    Dear Mary, greetings from sunny Singapore!
    First off, I’ve been enjoying your channel, I like your no-fuss, practical and sensiblenapproach to tackling tasks, please, keep up the good work!
    I’d like to share something I’ve tried with the water kefir:
    I love oat groats for breakfast, I usually soak a batch (2 cups, enough for about a week) overnight, sometimes longer, and pressure cook them for 45 minutes, and keep them in the fridge.
    After I have my breakfast, I’ll take a portion, mix it with fruit, steamed sweet potato (whatever I have at hand) top them up with milk kefir, and ferment this (with a fermenting lid, an ordinary lid would do too, as it doesn’t produce that much CO2) for a few hours., then keep it in the fridge overnight for my next day’s breakfast.
    The last batch I tried something a bit more elaborate: after the initial soaking, and before the cooking, I fermented the oat groats in water kefir (without the kefir grains, just with the finished 1st-ferment kefir) for about 24 hours.
    I was pleasantly surprised to find that the fermenting oats have developed a wonderful, yeasty scent, much like proofing bread dough does. I proceeded to pressure cook this batch for 45 minutes (with natural release of 15 minutes, it took 1 hour) stirred in some chia seeds to soak up the residual water and I am very pleased with the result.
    The oats are softer, but still chewy, with a wonderful, complex flavour, and the yeasty bread aroma survived the pressure cooking too.
    I am going to continue preparing my oat groats this way from now on.
    I must say, there’s a night and day difference between these and the store bought rolled oats!

    Thank you for your video. I have to admit drinking kafir and eating fermented vegetables, sauerkraut etc, helps me feel full instead of the constant feeling of hunger.
    However in this case I have taken a short cut! I bought a 250 ml bottle of kefir youghrt drink from the supermarket, I drank half but kept on topping it up with organic milk and letting stand for couple of hours! It seems to work!

    Mary's Nest to the rescue! I searched YT for water kefir & *every* video I found didn't explain what it was, what was needed, what are the kefir grains, what kefir grains to buy (milk vs water), why kefir "multiplies" etc. All the other videos assume the viewer knows about water kefir and titles of the videos "say" a step by step guide. Sadly, they aren't & left me soooo confused! Then I see your video and I know I'm going to get all the info I need! Why I didn't just start with searching your video idk but lesson learned & will check your channel first from now on. Just wanted to say *THANK YOU* & to let you know that you are an invaluable resource that I love. ❤️

    I have been watching your videos for about 3 weeks have tried both water Keifer and milk Keifer, really like them both wish I had known of them sooner, but learning so much from your videos.     Hi Mary. I just found your channel, subscribed to it and I am now bing watching your videos.
    I guess someone may have already mentioned this. Fluoride is supposed to affect brain activity very negatively according to some studies related to that what it is assumed to be the function of the pineal gland.
    On the whole, even without the kefir, I believe we would also profit from drinking water without chlorine and without fluoride.
    I am now excited to learn from you about kefir. Best regards, Lior

    Hi Mary, I use the same company for kefir and more as you show here. Sounds as if they have changed the grains, does it taste the same as some years ago? My best one so far is Cherry Vanilla. I use real 100% cherry juice from Trader Joe's (no other juice in it) and vanilla extract, do a 24 hour 1st ferment , add flavor and do another 24 hr. 2nd ferment. The cherry juice can be sour and this makes it a bit sweeter. Thank you for your time.

      Ann Hopy - Hi Ann, I’m not sure if they have changed the grains or not. I bough those a year and a half ago to make this video. My original grains that I use to make my kefir are about 20 years old! Can you believe it??? They were “live” and not dehydrated. I got them from a woman in New Mexico long before kefir became mainstream! LOL!! Your cherry version sounds fabulous!! Love, Mary

    Mary thank you for your informative videos. My name is Diane and I am a SCOBY killer. Killing my kombucha SCOBY really shook my confidence! I found a packet of dehydrated water kefir grains in the back of my refrigerator (they probably hid due to concern over their fate, lol!) and just started the rehydration process. So far, my milk kefir grains are thriving and producing and excellent beverage. . .maybe they will be able to cheer on the water grains. :)

I also need to find a video from one of my friends who has a video called kombucha for procrastinators. She’s so funny… She forgot about her Scoby and thought she killed it!!     Thanks again! During the fermenting process a slice of biological lemon even will improve the taste and the health of the waterkefir. Waterkefir grains enjoy a 'sour' environment to grow and live in.

    Thank you Mary.. Cultures for health is a very great learning site. I have been make Kefir for a very long time now... when we were somewhere, I took a sip of soda.. and it was awful. tasted so chemically. And that will most probably be my last sip.. It is hard to beat healthy drinking.. Nicely done video. Thank you.

    Several years ago I would make water kefir alot. I had a tick bite and within 3 days had developed a bullseye mark. So the doc gave me some antibiotics and I had no problems after that. But I believe that because I kept up with the probiotic that it helped my body reject anything bad.
    I quit because I believe I was just turning sucrose into fructose and (having quit all sugar) I needed to stop the water kefir. I'll try it again cause I got rid of my pre-diabetes but I will monitor my blood sugars.

    For about 2 years I have used the same grains and love to make this. One difference is that another company recommends about 12 raisens or avout a 1/2 T of molasses to add in goominerals. What do you think Mary? I want to add that you are my side kick during all of my fermenting discoveries. Your videos are so very informative and clear. Thank you so much!

    Thank you so much because that’s what I wanted to know was how to add the fruit so you just add the fruit after You strain it and you put the fruit in and you leave it in for 24 to 48 hours that’s wonderful I need to try that with ginger and with fruit thank you I know you do the ginger bug but do you use kefir kernels for that too

    I like to add a slice of ginger and one sliced up green apple with the sweetened water. We like to eat the apple slices after 24 hours. The grains also activate much faster.

      @@rebeccafreeman1123 I don’t do a second ferment unless it is with water kefir that has been dried and needs reactivated. I add water and molasses to the dried grains to help reactivate.
