Regarding kombucha: instead of buying a starter culture, you can grow your own scoby with a bottle of GT's original (unflavored) kombucha and some sweetened tea. It took me about two weeks to grow it large enough to ferment successfully.

Good quality thick glass flip top bottles should not explode under natural fermentation carbonation pressure , the rubber /plastic seals will give first if well seated but will also make a mess as well . Just fridge the 2nd fermed bottles sooner than later & you can always leave at room temperature after to suit the desired carbonation as required ( dependent on sugar content & temp ) ...Cheers big ears Kevin from Australia.
I have been making my water kefir since April here in Ireland. My family loves it. I have thrown away a lot as my friends are too lazy to do it. 5:32 second fermentation. Leave room in the bottle to prevent an explosion or carefully open the popper during the day. I am trying to use a much bigger container with less liquid to prevent an explosion.
I watched another video which said you should fill it to a certain line close to the top preventing less room for explosion. I would do some more research on that.
From my personal experience, kombucha is much stronger and kefir is a more gentle ferment. I react horribly to kombucha, but have no issues with kefir water.

I bought Florida Sun Kefir grains and they say to add molasses. But brown sugar has molasses and I might do that next time. So far I’ve made two bottles of “soda” I want to try other recipes.
We don't have central air (only 3 window AC units). It would be really warm in here if those weren't on in rotation. 🥵 On the flip side if we don't turn on our radiant heat in the winter we will wake up to it being in the 40s. 🥶

The water kefir is pretty good, besides being good for you. However, the problem is starting the process with those completely dehydrated grains. It took forever for them to begin waking up and beginning to grow. And its hot here. I bought 2 bags of that brand. My grains still don't look like the grains you have. I guess I would have had to start with fresh grains or start in the winter. I usually love all you do though.
I am new to your channel, but have been loving your sourdough videos. I also decided to buy water kefir grains and start that journey, but I just tried rehydrating them and after 2-3 days I have mushy grains. They are not plump like the Cultures for Health youtube video shows they should be.. any ideas?? I used 1/4 cup of organic light brown sugar and RO water to start them in a quart sized mason jar. I started making this a few months ago because of this video. Thank you soooooooo much. We all LOVE it. The last couple weeks the water kefir has become really thick and slimy. Any idea what I'm doing wrong? I use Berkey water and organic sugar. I'm so sad. We are missing our water kefir.

@@karenchakey you can let the dry on the counter if you want. If they have water when they freeze the cells will burst as the water freezes and expands.

Hi Lisa, I had a question regarding the water kefir process: when it comes to storing normal soda in the fridge, we don’t open them because it will lose it’s carbonation. I know with water kefir during its second ferment, you are suppose to burp the bottles to prevent them from exploding, but are you suppose to burp the bottles just before you refrigerate them? Should I burp the bottles as normal (every 12-24 hours) and then wait around 12 hours for some fizz to build up and then put those in the fridge without burping? Currently my bottles have been on the 2nd ferment for 48 hours. I burped them at 24. They didn’t have much fizz then, but after 48 hours the fizz was much better. I’m looking to wait another 12 to let the carbonation build up then put them in the fridge.

I havent had much luck with water kefir and I dont understand why. I use water from the berkey and brown sugar but my kefir wont get fizzy and the grains stay very tiny. Could they be dud grains?

I’m going to try lime juice too. I don’t recommend using just lime peel by itself because it gave too strong of a flavor to my kefir.

That happened to us too with a second ferment of kombucha! We left a shard of glass in the ceiling as a reminder to always always burp our ferments.

I have never have water Kiefer before. Do you drink it while breastfeeding? Also people were saying their whole family loves it, do you give it to your kids? Not judging!!! I really want to just be healthy and I’m sure I’ll get a bunch of comments about this. Sorry in advance❤

No need to compost the milk kefir grains - you cam just eat them. My kids love to eat them so it's hard for me to grow larger amounts of them 😁

I havent had much luck with water kefir and I dont understand why. I use water from the berkey and brown sugar but my kefir wont get fizzy and the grains stay very tiny. Could they be dud grains?
