    I like to use the glass Perrier bottles. I've never had a problem. Just release the pressure every couple of days.

    I am from the caribbean and ginger beer is a drink for christmas. We leave it to ferment and then enjoy with ice. We do add cinamon stick and whole cloves also. Some people add barley to help with the fermentation.

    I have GOT to try this! I love ginger ale. I've tried several of her recipes since I've been pressure canning ( since March 2021); and absolutely loved everything I've tried, the bone broth, yogurt cheese, apple cider vinegar, the list goes on. I'll repost a comment when I get it done.
    She really appears to have such a sweet spirit. I appreciate what she's taught me.

    I discovered your channel a few days ago while checking out different people making homemade vanilla extract. So I subscribed. Then I saw you making bone broth, then gingerale. Now I'm hooked. I'm just found the bottle I wanted for my extract, so I'm making that first. My sister is roasting two chickens and saving the carcasses. I already have one. So now I have to buy the chicken feet.       Thanks Mary. I drank some vitamin water with zero sugar and got my digestive system all messed up. When I do that I get fever blisters on my mouth. I haven’t had them in a long time, but this time I got a bad case of it. So, I haven’t been out anywhere in public for a few days. I think the fermented ginger drink will help me.

    Re-using old soda-pop plastic bottles (2-litres,ect) is what i suggest.
    They're designed to hold highly carbonated soda.
    You can give them a squeeze with your hands without opening then to guage the level of carbonation. Easily bends = leave it be, hard as a rock = crack open the top to let some of the gas out.
    If they do get over carbed and pop, it won't be flying shards of glass.

    Making ginger beer with powdered ginger years ago and using corked bottles..... The lids popped off late at night. the bangs scared everyone and the corks dented the pantry polystyrene ceiling tiles ! It does get active ! Take care.

    I read Nourishing Traditions 15 years ago and have made my own sourdough, yogourt, kefir, sauerkraut, etc., ever since. Nevertheless, I really enjoy watching you make some of the recipes that I have yet to master, like this one. I love that you offer tips and variations.

    Any homebrewing supply shop will sell the proper fliptop bottles for fermenting beverages. They have thicker walls than off-the-shelf glass beer or soda bottles. Brown glass is preferred because it filters light, which can create off-flavors in beverages. Good idea to place any sealed fermentation bottles in a large Rubbermaid type container just in case.
    The best prevention from "bottle bombs" is proper sanitation or sterilization. Choice 1 - Sterilize your fermentation vessels by boiling in a water bath, or Choice 2 - Submerge them in a bucket of Star-San sanitizer (homebrewing supply or online) solution before bottling at room temp.
    Coice 3 - plastic liter soda bottles - they're very strong and won't shower you in glass - refrigerate when bottle walls feel taut.

    Starting recipe to make 1 Quart:
    Between 2-6 thumb sized lobes of ginger, finely chopped (peel unless organic, scrap with edge of spoon)
    Just over 1 quart (4 cups) of filtered water (some lost to boiling)
    High to boil them reduce to medium high and high simmer for 10 min.
    Take off heat and 1/3 sugar.
    (+1 Tablespoon molasses if using white sugar for nutrient boost)
    Sir to dissolve then leave to cool
    Pour sieved liquid into final jar (1Quart size)
    1/4 cup sieved ginger bug
    Juice of 1 lemon.
    Put on solid lid & leave to ferment in warm place until it's fizzy and to taste. Maybe 3-5 days. Check each day & burp as needed. Hotter kitchen = faster ferment.
    Notes: looks like Mary's suggestion for first batchs amount of ginger is 4" if placed in a line of lobes @ width of thick female finger. I paused it, the amount she normally uses seems to be 5 thumb sized lobes all together. New to ginger, rip off a lobe and place next to thumb, a wide lobe may be "2 thumb sized" pieces
    2. Every ingredient and process cam be adjusted to suit you. This is her recommendation to start.
    3. This is her recipe as described in video for us to reference after understanding process, not an alternative to video.
    4. Have fun with it. I make this strong then serve it at table with jug water so everyone can dilute to taste, up to 1/2 c water for mild but still fizzy.

    QUESTIONS: Why do you prefer clear over amber flip-top bottles? Also, I have a warmer home than most people and have discovered this changed my fermentation times from people on RUclips most of the time, so this is why I ask: what temperature is the room that you ferment things in? FLIP-TOP (OR SWING-TOP) BOTTLE NOTE: I tried "burping" my kombucha during the fermentation phase and discovered that with the flip-top bottles explosions are GUARANTEED when you do this! I have found that it all works out just fine if I (1) do not ferment too long, (2) do not ferment with too much sugar, and (3) do not open the bottle(s) until they have been in the refrigerator a minimum of 8-12 hours. Example: one RUclips video I watched said to put 4 oz. of natural fruit juice into each bottle of kombucha. This was the same week I was "burping" the kombucha. YIKES...! It was the fourth of July in my backyard, and I lost nearly half of every bottle when opening them. NOW with sweeter fruit juices (such as mango or pineapple) I limit the amount to 2 oz. per 16-oz. kombucha bottle, which I fill only to the BOTTOM of the neck. This seems to work out perfectly! P.S. By "explosions" I did not mean broken glass -- but I mean like the fizz shooting out many feet with each burp so that if you don't have it angled just right it can spray in your face! Well, it was a lesson I will never forget, LOL.

      Hi Michele, I really don't "prefer" the swing top bottles at all - regardless of color. I just had that one left over from a previous beverage. I don't throw out anything! LOL!! Yes, I am with you. I am actually afraid of those types of bottles so I just drink our homemade sodas when they are ready and avoid the whole swing top bottle adventure! As you shared...they can be quite something!! LOL!! As to room temperature - yes, so many of the videos on RUclips show leaving things on the counter for so long. That just doesn't work here where I live. I am in central Texas and most of the year it is quite warm. It can be 75F+ in my kitchen on an average day. I find 2 days quite sufficient for my ferments and maybe up to 5 days during January and February when it is a bit cooler here. But never weeks! LOL!! Love, Mary

    In the 1880’s in Detroit a pharmacist named James Vernor brewed a ginger ale that he made available in his pharmacy. It became quite popular and he made a syrup to sell to other locations for their soda counters.
    The company has changed hands many times since but it remains a local favorite!!!!

    Mary, Thank You for being you and sharing your gracious self and knowledge with us.... yumm and sooo healthy too. I'm going to try this ginger ale to see if I tolerate ginger better this way. It's so healthy and I could use gingers benefits for my health. I've made the Kifir water ~ love it. I'm going to make the Kvass. I love beets.
    I'm looking for health building gut foods and anti-cancer foods, etc. I just found my 'Nourishing Traditions' by Sally Fallon. I thought I'd given it away since my family has all moved away. Nope, It's here. Time to start dabbling. I do make nutritious and delicious soup stocks regularly. Oh do you have a good sour dough starter, and bread recipe?

    Mary, I absolutely love the ginger ales made in Jamaica and Brazil. They seem to add black pepper to
    the recipe. Very fire-like but good. My recipe was a failure that I trashed. But will try your different sodas.
    I have often made my own CO2. But transferring a gas to bottled simple syrups is risky and not always
    successful. PS..Just love a lot of your ideas!

      A couple years ago, i decided to test ginger ales and bought one bottle of every kind I could locate in Austin. I like strong spicy ginger ale and found Maine Root the best commercially available brew. I think it has to do with the amount of ginger but with this preliminary recipe, I can try out that theory. I grow my own ginger so I have a plentiful supply!!!

    Ginger is something I have tried to grate SO many different ways over the years. There are only two ways I recommend: for a smaller amount use a microplane grater -- and for a larger amount, if you are fortunate enough to have a powerful high-speed blender (like a Blendtec or Vitamix) it makes life SO easy when you are going to be mixing it with water anyway....!!! (I would not try it even in one of those blenders without the water.)

    You know, I really enjoyed the kombucha I made, but once I made the ginger ale me and my roommate are like, "Who cares about kombucha?" We LOVE the ginger ale...!!! (Oh, and for me and my warm household temperature of 78-79 degrees, fermenting the ginger ale for 12 hours was almost too much! Today I'm going to ferment just about 8 hours before refrigerating. But I'm using the flip-top bottles, and they really do maximum the carbonation feature, no doubt!)

      P.S. I NEVER burp flip-top bottles anymore, but when I did I learned to ALWAYS do it outside (or in the bathtub) because it's about guaranteed to "go off" on you before being refrigerated!

    Ingredients:
    Ginger 1 quartz,chopped.
    4 cups water.
    Boil ginger & water for 10 minutes.
    3/4 cups sugar/cane juice sugar.
    Strain the formula. Let in room temperature.
    Add 1/4 ginger bug into the ginger mixture. And lemon.
    Put the mixture in the glass jar/ bottle for couple days for fermentation in room temperature. After couple days, put the bottle in fridge.

Several weeks back I took to learning from you how to make lacto fermented pickles and they came out EXCELLENT and now as a result I'm making more and more of em! And then somewhere along my travels I found out I could make my own probiotic ginger ale and here you are teaching on it so now I get to learn from you again!     I got my bottles from the beer store. German gorse bottle beer. They have never broke for me. The glass is brown. I have used them now 10 years.

    My swing top bottles, which I used for water kefir (not a kombucha maker, either), came from the Italian soda that Aldi's sells. I'd expect them to be able to stand the pressure, but everything has its limits. I had one explode in the fridge, while another one was in the fridge for almost two years. Once, a half-gallon canning jar exploded on the counter. The recommendation to put them in walled container is a good one! I'm about to try my hand at a ginger bug, but I think I agree - for a regular drink, water kefir is better. Depends on how much sugar the ginger soda ends up with.

    Hi Mary in my country we make fermented ginger ale but we call it ginger beer, we do not boil it we just let it sit in a dark area for 2 days and it is very tasty. We sweeten to taste and it's good

      Yes we make (and have done from my Grandmother) a 'ginger beer bug' ... I'm in NZ ... i now make a less sweet version ... along with Kombucha. We use undissolved sugar as a food for bacteria. Most naturally fermented drinks contain at least a little alcohol - my kombucha is usually 0.06 - 0.10 ... I expect Ginger Beer is about the same. We have Ginger Ale here but it's more a dark brown than the beer.

    I love using the swing top bottles. I save my Grolsch Beer bottles for this purpose. I know they are pressure rated. I just burp them every day or two.

    Just so I am understanding this correctly, at one point you mention about maintaining the ginger bug. You said to take it out the fridge and remove some of the liquid and ginger. Then replace it with fresh water , ginger and sugar then put it back in the fridge. Sounds like these instructions are in the even that you are just maintaining the bug.
    Since you will eventually run out of space in your jar, you will have to make room for fresh ingredients in order to keep it going. Is that correct?
    Similarly, I am guessing this is the same process to follow when you are you actually use some of it to make a soda. Since you have to remove some of the ingredients, you will need to replenish afterwards. Is that correct?

      Yes, it took me a few tries to figure out what she meant by that too. I didn’t want to keep tossing out the ginger so I would take it out and then I would brew ginger tea with it.

    Just started my first ginger bug Mary ,
    I also did my first ever brine brine today thanks to you !
    2 gallon glass jar in 3% tomatoes , green-beans , carrots , garlic, Basel.
    I then did a another 2 gallon in 5% brine for my cucumbers , onions and bell pepper I added no spices just wanted a fresh brine on those . THANK YOU MARY i'll let ya know how all this goes
    I have several two gallon jars so I made my 5% brine in one big gallon of water was easy ..

    I am.diabetic and cant have the processed sugar...only othe natural sweeteners..no honey etc...does the sugar get used up in the fermentation process

      So I guess you haven't found the many cures for diabetes. I was diagnosed with diabetes. I found a cure that worked for me. My doctor was amazed but never asked me how I did it. Type 1 diabetes cures also available.

    Marry can you use truvia cane sugar blend instead of sucanat ? Also when you are done boiling it and it cools down can you place it in plastic 710 ml bottles and burp it every two days

      Wow!! These are great questions. As to the alternative sugar you mentioned, I’m not sure. I’ve never tried it in this recipe. I’m hoping others will chime in. As to bottling it… I think you know how nervous I feel about bottles exploding so I would be a little hesitant. But if you decide to experiment, make sure you put them in some sort of plastic container in the event that you forget to burp them or you don’t burp them soon enough. Love, Mary

    Stupid question: why not just puree the ginger for making the Ginger Bug? Obviously, peel it first, but why not puree it to get the same effect as grating?

      Hi Patrick, you can also do that. There really is no one right way to make a ginger bug and everyone develops their own techniques. Ferments can always be so darn persnickety and it’s really a matter of trial and error to see what you can get to work in your kitchen. Love, Mary❤️🤗❤️

    Hi Mary , you are so sweet and smiling . I love all your recipes and tho I live in India and hardly get all the things you use , yet I love to watch all your videos just to gain knowledge. I did try making bread and it turned out well. I would like to add here , altho my (earlier Indian mom's preferred their boys to remain out) hubby never gets into the kitchen, he loves watching your videos along with me .     Thank you Mary, I love all of your videos! I saw another video where they use the bottles but they pour one serving in a small plastic soda bottle to use to test the pressure. They squeeze it at least once a day and when they find that the bottle is pressurized (firm), they know all of the glass bottles are done.

    Hi kindly can u tell me does this ginger ale u made contains any alcohol in it?? Or it is alcohol free??

      This is basically alcohol free. However, whenever you make homemade fermented beverages - depending on how long you allow it to ferment - at some point it may have a very mild alcoholic level...maybe .5% to 1%...such as when making kombucha. But when making these things homemade, I have no way to test the alcoholic level.     Good morning Mary!!!! I was so excited to try this recipe but I ran into a snag. After letting it set to ferment I realized that the ginger ale had gotten thick and slimy . What did I do wrong?     So much good information! I know what I will be doing today. :) Looking forward to your kombucha story. Here is one of mine: I forgot a growler of kombucha in the cupboard for more than a month and when we opened it, it shot up and out of the bottle like a volcano and all of that kombucha hit the ceiling of the kitchen spraying all over everywhere. It was quite a shock. Now I am very careful to burp my bottles daily. :) Thank you for this video and have a beautiful day!

      I can SO relate!! About 20 years ago, a friend gave me a scoby in a large but narrowed mouth jar. I had never heard of it and didn't know what to do with it, so I left in on my counter. It grew and grew and grew to the size of a small tire!!! When I tried to get it out of the narrowed mouth jar it was like a hard piece of rubber. I had to hack and hack at it to get it out. It can seem a little challenging in the beginning but once you get the hang of it it will be a lot of fun.       I burb my bottles 2x's a day. I make water kefir, ginger bug, kombucha, etc. And I prefer mine in swing top bottles. 60 years ago all of our drinks came in swing top bottles and they produce the best carbonation. And lets be honest, it's not difficult to burb a bottle once or twice a day, is it? Nah.

    Quick question Mary - in Canada most of our granulated sugar is beet sugar. Do you know if beet sugar work as well as cane sugar in fermentations? We use a lot of molasses for cooking so I could use brown sugar or add the molasses

    There's another quick way if you make water kefir, just add a tablespoon of ginger puree to your kefir when bottling shake and let it ferment a day as normal. If you use a bug, try adding a small sliver of scotch bonnet chilli to the sugar water before adding the big, it gives it that Jamaican ginger beer kick. You don't need special sugar, and the yeast in ginger is on the skins not the ginger.

    I’d like to make sugarfree, meaning with erythritol or allulose, gingerale. Can I substitute these sweeteners?

      I’m not sure if that would work. The yeast and good bacteria really need something that is a real food… Such as sugar… To eat. I’m not sure if those alternative sweeteners would provide them with the food that they need. Love, Mary

    What is the least amount of sugar that can be used to promote fermentation? Trying to eliminate sugar from the diet due to diabetes in the family. Also, would this be good to use for stomach upset like store-bought soda is recommended for?

      Hi Lisa, Thanks for visiting - and all great questions! Homemade probiotic sodas do need some type of real sweetener to feed the good bacteria. And as to amount, it can be difficult to gauge. You could cut the amount in half and see if the fermentation process still takes place. HOWEVER, If you need to limit sugar, it is better to get your probiotics from an alternative probiotic rich "soda" made with raw apple cider vinegar and carbonated water. You can add mint, ginger, and/or fruit, etc. to make them very flavorful. And you can also substitute the natural sugar sweeteners normally used with alternative sweeteners such a stevia or monk fruit. I have a playlist for these "mocktails" known as "shrubs" and "switchels" here: ruclips.net/p/PLkRuW3pBo2U2w2-CiBrkNnZj_IIlqZc9h Included in this playlist is also how to make your own raw apple cider vinegar if you prefer not to have to buy it. These type of "mocktail" beverages can also be comforting to an upset stomach - especially if you add mint and/or ginger.

      Hi Todd, Thanks for visiting. This is a great question! Historically, ginger beer was fermented while ginger ale was not. So in a way, this Is more like a ginger beer than a Ginger ale. However I did not want to confuse people and lead them to believe that I was making something that was alcoholic....Even though ginger beer is not alcoholic... The name may confuse others. Today, ginger beer and Ginger ale are generally sold as non-fermented beverages with ginger beer having a slightly spicier taste than Ginger ale. Hope this helps. Love, Mary

      Hi Kelly, I have not tried that but I definitely think it would work. That flavor combination sounds outstanding. And if you want to have the ginger ale be a lighter color, you can use white sugar instead of the dried cane juice that I used.     Can you add extra ginger starter bug to your ginger ale recipe to use it up if your not going to be storing it? Not sure if to much is to much. Right now I’m using what was recommended. 1/4 cup per quart. So could you use a 1/2 cup per quart for example?

    Hi Mary, I learn so much healthy foods at your chanel. Thank you much for your time to share you knowlege, one thing I don't understand, can we strain ginger before adding in sugar? I am thinking a lọt of sugar will with ginger before we throw them away

    Can you use monk fruit instead of sugar? I’m diabetic.

      Hi Terri, So sorry but no. The yeast and bacteria need the sugar to eat. If you are diabetic, it's best to get your probiotics from fermented veggies.
