      @Nicole Ro
      Chinese cooking wine is easily obtained and is what gives authentic Chinese food that "Chinese food" taste. Granted, a lot of American Chinese restaurants have started leaving the Xiao Xing wine out because they know Americans don't know the difference, so it saves them money. But using Xiao Xing wine makes all the difference!

      @@LizzyDidntDoIt I didn't recognize the bottle, but it was likely shaoxing wine. I buy it in the pretty ceramic crock that looks nice on the shelf after the wine is gone. Several of the bottled varieties are really nice too. Pick one you like - they're not terribly expensive, so you can try them and decide.

And thanks to my mom for fixing Bok Chou when I was a kid; because of her, I knew it would be delicious!

    Great - thank you! ...I made a bok choy/spinach mix this evening, and it turned out very nice!
    I like the pre-cook on hot dry pan technique ...although I didn't add the greens to the pan a dramatically as you did.
    I'll certainly try that next time.

    I have to say that i was pleasantly surprised. I'm an ABC and was never taught to cook so I'm self taught. I typically stir fry the bok choy with oil but i tried it her way and it came out really crunchy. The ginger and rice wine is a nice touchand gives it just a little bit more taste. One recommendation is to add measurements in the comment section.
