I will try some time and update here. - Here are the spices I use in my blend: peppercorns; black, green and pink | nutmeg | mace | ground ginger | black cardamom | coriander seeds | star anise | cinnamon | allspice - Could use almond meal (whole ground almonds) - I wonder if the pfeffernüsse recipe said to use hot water for the glaze to partially cook the sugar out? Some brands have cornstarch added which can affect flavour - Stored with silica packets; the cookies are still perfectly crisp after several days! - If you’re not bothered about the port flavour specifically, it may be worth trying the recipe with dark brown soft sugar. Btw, I think what happened with the cookies by puffing then collapsing may be the alcohol in the port. It evaporates quicker than water, hence the puff and go!!
I think vegan butter has a higher ratio of water than vegan margarine (and maybe more solid fats like coconut oil?). I can't answer about trans fat as I eat what I want when I want it, in moderation
I think you may well be onto something. I made another batch on Christmas Eve using dark brown sugar and just water in the flax. The texture was completely different again. This time they stayed puffy (though not as puffy as the Halloween ones) and were crisp the whole way through. I love that one recipe gives me three options for texture!
I think it's seven years now. It's really hard to say health wise as I'm still suffering the aftermath of covid in 2020. It's caused widespread health issues for me
@ Me too. I got Covid in 22 and it was brutal, no hospital stay or anything but right after the week of hell my left eye went to shit and has never recovered. Been going to the doctor for it since. Sorry you are having problems as well.

Sorry for the ignorance, but what is the difference between vegan butter and margarine? Would you be creating trans fats with vegan butter?

How long have you been a vegan? And since you became a vegan have you noticed any improvements in your health? Physically and mentally?
